The hubby and I concocted this amazing combo the other night with some Tilapia fillets and a few other delicious summer-y ingredients. These grilled fish tacos are perfectly light yet so satisfying and loaded with fresh flavor…not to mention their gorgeous color!
A squeeze of fresh lime juice over each is a must and makes them simply irresistible! I hope you enjoy them as much as we do!
{GRILLED FISH TACOS}
Serves 5-6
3 thin white fish fillets (we like Tilapia)
2 T. olive oil
2 limes
1 T. garlic
salt & pepper
1 mango, pureed
1 avacado, diced
1/2 head of cabbage, chopped
5-6 small flour tortillas
Squeeze one lime in a bowl. Pour olive oil in a separate bowl. Brush fillets with olive oil, lime juice and garlic on both sides, then salt & pepper both sides. Grill fish on BBQ grill over high heat for 2 minutes on each side.
Break up fillets into small pieces. Fold tortillas and hold in your hand while you fill with fish pieces, chopped cabbage, and diced avocado. Top with pureed mango and a generous squeeze of fresh lime juice.Enjoy!
