I’m a firm believer that breakfast is the most important meal of the day. I never miss it! I don’t think my body would allow me to skip it even if I tried. My tummy starts rumbling pretty much from the moment I get out of bed. 🙂
In keeping with my New Year’s resolution to make wiser food choices, I like to fuel my body with wholesome meals that will sit with me for a while so I don’t have the constant urge to snack. Especially since I’ve been doing some high intensity exercise each morning, I need all the energy I can get!
I’ve always been a huge cereal fan. I love starting my day with some Spoonfuls of Goodness. Grape Nuts, Honey Bunches of Oats and Great Grains are some of my most favorite options of all time. I love that they contain fiber so they help keep me full until lunch. And they have whole grains that are packed with nutrients, including protein, fiber, B vitamins and antioxidants. So many reasons to include these as part of the morning meal!
I make a habit of stocking my pantry with tasty cereal like Honey Bunches of Oats Honey Roasted and Great Grains. I like to make it easy for my family and myself to make smart food choices all throughout the day, but especially for our first meal.
I grabbed some Grape Nuts and these other family-pleasing cereals during my last trip to Walmart.
Since I’m always looking for ways to include fresh fruit with my meals, I came up with this simple recipe for a nutritious and delicious parfait! I grabbed a pretty glass and layered it to the top with a scrumptious honey cinnamon vanilla yogurt mixture that I quickly stirred together, some mouth-watering melons, some tasty Grape Nuts for added texture and substance and some blueberries for good measure. I’ve always thought that Grape Nuts and yogurt were perfectly paired.
This is one of those things that will leave you feeling full and happy, yet not in the least bit guilty. I love it when that happens!
This is also a perfect snack idea if you need something to tide you over until the next meal.
Even if you’re short on time before heading out the door, you can still whip this up in a hurry! Here’s how:
Melon Berry Parfait
Ingredients
- Cantaloupe
- Honey Dew Melon
- Blueberries
- Post Cereals Grape Nuts Original Cereal
- 1 c. Vanilla Yogurt
- 1 tsp. honey
- 1/8 tsp. cinnamon
Instructions
- Use a melon baller to create balls with the cantaloupe and honey dew melon (as many as you like). Stir together vanilla yogurt, honey, and cinnamon in a small bowl. In two short glasses, layer first some cantaloupe and honey dew melon balls, then some blueberries, half of the yogurt mixture, a few heaping spoonfuls of Grape Nuts, and finish with the remainder of the yogurt mixture. Top with additional blueberries and a sprinkling of Grape Nuts for garnish.
These melon berry parfaits will really put a smile on your face for the day ahead! I hope you get the chance to enjoy one soon!
