Mint Brownie Cookies

The perfect combination of mint and chocolate in a chewy brownie cookie!
What’s better or at least every bit as good as a mint brownie?  A Mint Brownie Cookie! I love me some brownies, but they take forever to make and bake up!  So because I’m sometimes a lazy person and I want my sweets (NOW!) I opt towards cookies most of the time.
I have a fantastic recipe for Mint Brownies that uses the box mix with the addition of homemade mint and chocolate layers. It’s pretty quick to whip up, but it’s just not a cookie!  I’m kind of a fanatic when it comes to my cookies, can you tell?
{MINT BROWNIE COOKIES}
3/4 cup (1 1/2 sticks) butter, softened
2 eggs
1 1/2 cups brown sugar
1 Tbsp. water
1 tsp. vanilla
1 3/4 c. flour
1/3 cup baking cocoa
1/2 tsp. baking soda
1/4 tsp. salt
1 c. chocolate chips (I like semi-sweet)
1 c. Andes Mint Baking Bits, plus more for topping
Preheat oven to 375 degrees Fahrenheit.  In the bowl of an electric mixer cream together butter, eggs, brown sugar, water and vanilla.  In a separate bowl, stir together flour, baking cocoa, baking soda and salt.  Add flour mixture to butter mixture and mix until combined.  Stir in chocolate chips and mint baking bits.
Scoop cookies in 1″ balls or by the rounded tablespoonful and place two across, four down on a greased or baking mat lined cookie sheet.  Bake for approximately 8 minutes.  Don’t overbake or they won’t be chewy!  Immediately after pulling them from the oven, sprinkle cookies with additional Andes mint baking bits and press them slightly into the tops of the cookies.  Let sit on cookie sheet for about 5 minute, then remove to a cooling rack.  Store in an airtight container.
I’ve mentioned that I’m a leader over girls ages 8 and 9 in my church.  We meet every other week for a fun activity.  Because it’s December and a great time to focus on giving and serving, we met up at a rest home the other evening and sang Christmas carols to the sweet old folks there.
It was such a neat experience, as it always is every time we visit.  Their faces lit up at the sight of the adorable girls in their Christmas dresses, singing festive tunes in sweet tones.
We all left feeling with warm fuzzies inside ourselves, even though it was bitterly cold outside.  I just can’t get enough of this time of year.  I wish it lasted longer.
But, since we only get one month of Christmas and all the wonders and magic that come with it, I like to make each day really count!
So I blasted the Pandora Christmas music station on my computer as I baked up some of the yummiest cookies ever known to mankind.  And then, because I’m all into the spirit of giving and also because I’m trying not to gain a thousand pounds during this time of wonderful, plentiful food, I took the whole lot to the home and let others enjoy them. 🙂
But not before trying one or two. 🙂
These are a perfect cookie for holiday party platters and neighbor goodie gifts!  They’re chewy and delightful the first day, and the following days taste like a thin mint cookie, so you just can’t go wrong!
