Last weekend we decked our halls with frosted berry garlands, pine cones and fresh pine sprigs, stockings and nutcrackers while blasting festive carols throughout the house. We also adorned our tree with lights, sparkly balls, ribbon, and the kids’ special ornaments. I think it’s safe to say we are officially in the holiday spirit! I love to be able to enjoy our magical house for a full month before having to take it down, so we’ve started decorating just a little before Thanksgiving the past few years.
We have some exciting plans for the coming month, including a handful of parties, tree lightings, and viewings of incredible light displays at our local botanical gardens. This is such a thrilling time! We love to make memories together as a family through fun traditions and delicious food.
One of the things I most look forward to about this season are the delectable desserts!
If there ever was a perfect holiday flavor combo, it’s mint and chocolate. At least I think so! Green mint mousse and decadent chocolate loaf cake cubes are a match made in heaven! Throw on some Reddi-Wip® and pretty chocolate mint curls and you’ve got a gorgeous confection that will please the party crowds!
And since we all know how busy this time of year gets, I’m sure we can all appreciate sweet treats that come together without much ado! Which is why I like to keep Reddi-Wip® Real Whipped Cream and Marie Callender’s® Double Chocolate Loaf Cake on hand so I can quickly put together a dessert when I’m asked to take one to a party.

Marie Callender’s® Double Chocolate Loaf Cake have that wonderful, fresh homemade taste. They can go from the freezer to the oven and onto a pretty platter in just 30 minutes, which is a big deal, especially during this hectic season! Plus, cleanup is a breeze!

These trifles are best when assembled just before setting them out on the party table to be enjoyed.
Here’s how to make them:
Mint Chocolate Trifles
Ingredients
- 1 Marie Callender’s® Double Chocolate Loaf Cake prepared according to package directions and cooled
- Reddi-Wip® Real Whipped Cream
- 8 oz. almond bark vanilla flavored coating melting squares
- 1/3 c. heavy cream
- 3-4 drops green food coloring
- 3/4 c. powdered sugar
- 1 tsp. peppermint extract
- 3 Tbsp. heavy cream
- Mint chocolate curls for garnish optional
Instructions
- Prepare the mint layer by whisking together 3/4 c. powdered sugar, 1 tsp. peppermint extract, and 3 Tbsp. heavy cream in a medium bowl. Set aside. Melt the almond bark squares with 1/3 c. heavy cream in a sauce pan over low heat, stirring constantly. Melt completely and stir well. Remove from heat. Add 3 to 4 drops green food coloring and stir until completely incorporated. Fold green mixture into powdered sugar/peppermint/heavy cream mixture until incorporated. Cover bowl and let chill in the refrigerator until set and thickened, no longer than 1 hour, for optimal consistency. If mixture gets too thick in the refrigerator, microwave it for about 8 seconds and stir.
- Prepare trifles by cutting cooled loaf cake into cubes, then layering about 3 cake cubes on the bottom of a small glass cup, followed by a big spoonful of the green mint mixture, then some Reddi-Wip. Repeat layers, finishing with Reddi-Wip and a garnish of mint chocolate curls. Serve immediately.
