Start the morning off right with Mom’s Breakfast Casserole! It’s a hearty meal full of Vitamin D, bacon, eggs, potatoes, and cheese!
Growing up, we’d beg my mom to make her yummy breakfast casserole. We’d typically get to enjoy it on special occasions like Christmas morning, Sundays every now and then, or for birthdays. I’m not sure why it was reserved for just these times, as it’s super simple to make and SO incredibly delicious! I think we would have done flips if she’d have made it even once a week!
I love that I can assemble it the night before, keep it in the fridge, then just pop it in the oven first thing after waking up. Then, before you know it, we’re feasting on a warm, tasty egg and potato breakfast! Don’t leave out the bacon! Do I even need to say that? 🙂 I caught my kids hovered over the dish, picking it off the top sneakily. As if I wouldn’t notice. Ha!
We’re big vitamin people at our house. If there’s something as simple as taking a vitamin, that we can do to stay at our best, I’ll happily do it!

We love to have breakfast for dinner at least once a week, and this was a very welcome sight the other evening at our table.
Here’s how to put it together:

Mom’s Breakfast Casserole
Ingredients
- 2 1/2 c. boiled grated potatoes (or use frozen, shredded hashbrowns like I did)
- 1 tsp. salt
- 1 tsp. dried mustard
- 2 c. grated cheddar cheese
- 1 c. cottage cheese
- 3 green onions finely diced
- 9 large eggs beaten
- 4 drops of your favorite hot sauce
- 1 lb. bacon cooked and crumbled (reserve about 1/2 cup for the topping)
- 1/4 c. evaporated milk
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
Instructions
- Add potatoes, salt, mustard, cheddar, cottage cheese, green onions, beaten eggs, hot sauce, bacon pieces, evaporated milk, garlic powder, and pepper to a large bowl and stir well to combine.
- Pour and spread into a greased 9x13" baking dish, cover with foil, and place in the refrigerator over night or for at least 5 or 6 hours.
- Preheat oven to 350 degrees Fahrenheit, remove cover, and bake for approximately 40 minutes, or until eggs are cooked. Sprinkle with reserve bacon for the last five minutes' cooking time.
