My very first “Pinterest Success Story” submission comes from a very special reader and sister :), Catherine, who made the dreamy-looking Orange Creamsicle Cupcakes featured below. Catherine’s full time job is as a stay-at-home mom to an adorable little girl, but she also has a side job where she bakes birthday treats for teachers at a large preschool. Catherine knows a Pinterest baking success when she makes one! The orange icecream-filled popsicles are pure perfection to me on a hot summer’s day, but in the cupcake form, I could eat them anytime of the year, so I’m excited to feature these as my first recipe.

There are few things in life as rewarding as baking up a dessert which you
then have the pleasure of devouring, at least to this sugar-loving lady. The heavenly aroma while baking fills the whole house, and I love it. These Orange Creamsicle Cupcakes were no exception.Catherine’s masterpieces:
I followed the ORIGINAL recipe exactly, and besides the juicing of enough oranges to obtain 1 ¼ cups of juice, they were fairly easy to concoct.
Honestly though, the show-stopper is definitely the frosting. The cupcakes themselves have a subtle “orange-y” flavor to them, but combined with the more intense flavor of the frosting,
they were AMAZING.
I used the Wilton 1M tip, as recommended, to ice the cupcakes. I definitely needed a second set
of hands to help out by guiding the cupcake while I swirled the frosting. Though the results were very pretty, the swirling technique was a little time-consuming for this first-timer, so I frosted half of them normally after running out of steam. Though they were not as visually appealing, they were every bit as tasty as their prettily-frosted companions.
Total time for this baking project was around 2 hours, and worth every minute. Also, this recipe does require a few ingredients that I didn’t have readily available in my kitchen, but the results totally warranted the extra trip to the store. Trust me-they are delicious!
These were definitely a Pinterest success!
Christine’s Note: To make these even cuter, you could add an orange slice to the top or a fun tiny printable (such as THIS) glued to a toothpick or popsicle stick and inserted in each cupcake. Thanks for paving the way Catherine! I can’t wait to make these!
