These Chicken Fingers, topped with crushed Honey Bunches of Oats and a yummy peanut butter and honey drizzle prove that cereal isn’t just for breakfast! It’s a meal the whole family will get excited about!
I love coming up with new dinner ideas that even my picky kiddos will eat. They’re not big on meat, so I take it as a challenge to find protein-packed ideas that they’ll taste test and then like enough to take that second and third bite and so on until their plate is clean.
Today’s recipe is a collision of two of kids’ traditional most-loved foods…peanut butter and honey sandwiches and chicken nuggets. Now, of course I ditched the sandwich part, but as for the chicken nuggets aspect, these are even better, with the sweet and crunchy coating of Honey Bunches of Oats cereal.I’ll admit that my kiddos were very hesitant to try it, as they are with every new food that I place before them at the table. But their expression was of very pleasant surprise after those taste buds got a sample.
Total Mom victory! I celebrated to myself because I’ve learned that I can’t make too much of a big deal about my meal time wins in front of the kids or they tend to shy away. So I just watched them gobble it down, between munches of my own, while silently clapping under the table. Later, I gave myself that much-deserved pat on the back. 🙂 Hey, a heroine deserves her glory, and I most definitely felt like super woman after this happily-ever-after dinner story.
We can’t get enough of Honey Bunches of Oats cereal around here! With so many varieties to choose from, there’s something for everybody. Now there’s one that caters to my obsession (Honey Bunches of Oats Gluten Free Chocolate). Because chocolate for breakfast is always a good idea!
Honey Bunches of Oats with Almonds would work great in today’s recipe, but I decided to instead use Honey Roasted. Feel free to swap in whichever kind you prefer!
I enjoy thinking outside of that cereal box, so I found a way to incorporate a morning meal favorite into an evening delicacy for my family’s enjoyment.
Walmart’s cereal aisle shelves are just bursting with Honey Bunches of Oats goodness! There are also two new products to look for-Crunch O’s and Kung Fu Panda RTE Cereals!
{PEANUT BUTTER & HONEY CHICKEN TENDERS}
Makes 8
1/2 c. flour
2 eggs, beaten
3 cups Honey Bunches of Oats Honey Roasted, coarsely crushed
salt
8 chicken breast tenderloins
Peanut butter and honey sauce:
3 Tbsp. smooth peanut butter
3 Tbsp. honey
3 tsp. soy sauce
For the chicken tenders, set up a station with three bowls (or in my case pie plates). Place the flour in one, the eggs in another, and the coarsely-crushed Honey Bunches of Oats in the last, in that order. Grab a chicken tender, salt it on both sides, then coat it in the flour mixture. Next, place in the egg wash and fully coat it. Lastly, press it into the crushed Honey Bunches of Oats, ensuring that it’s well covered on both sides. Place it in a casserole dish that’s been lightly sprayed with nonstick cooking spray. Repeat for remaining tenderloins. Bake at 350 degrees Fahrenheit for approximately 30 minutes, or just until chicken is cooked through and no longer pink.
For the sauce, place peanut butter and honey in a microwave-safe bowl and warm in the microwave until peanut butter is softened and will stir smoothly into honey. Stir in soy sauce. Serve warm drizzled over chicken tenders, if desired.
I love how versatile this dish is! Serve them over rice, drizzled in peanut butter and honey sauce deliciousness, or without the drizzle (if you’re not a PB fan), eat them with your hands to save on dish-washing afterwards (and so you can have a well-justified excuse to lick your fingers), the options are many! No matter how you like them, you’ll come begging for more of that tasty Honey Bunches of Oats crunchy Honey-Roasted coating!
One of my kids even picked the topping off and ate it before the tender chicken, but she’s also a lick-the-frosting-off-the-cupcake first kind of gal. Because why save the best for last? 🙂
Being the peanut butter fanatic that I am, I drizzled mine generously with the sauce, but these can definitely stand on their own if you decide to omit it.
Be ready to add this to your regular meal rotation, because if your family is like mine, this one will be highly requested! Now go be that dinnertime hero!
