Pineapple Drop Cookies: February Mystery Dish

Pineapple Drop Cookies are an old-fashioned, wonderful dessert that I think you’ll really enjoy!  A soft, moist, cake-like cookie subtly flavored with crushed pineapple is frosted with whipped cream cheese icing and topped with chopped macadamia nuts.  Perfection!
I always love this time of the month when I get to share the incredible talent of our Mystery Dish group with you!  This time, I had the wonderful opportunity to host, which meant I chose the ingredients!  I honestly didn’t know what I was going to make when I announced the selections, but I knew it was hard to go wrong with these options.  🙂
Here are the yummy choices (participants were asked to use at least two):
Fresh mushrooms
Pork
Spinach
Cream Cheese
Pineapple
Butterscotch Chips
Macadamia Nuts
Sriracha Hot Chili Sauce
Ritz Crackers
Tortillas
I was able to incorporate three of the required ingredients.  These cookies are unique from many in that you literally “drop” them onto the cookie sheet. Thus the title. The batter is not runny, but it’s not thick enough to shape into a ball.  The result is a “mini cake”, as my husband described them.  What is cake without frosting?  And cream cheese, nonetheless.  These cookies are a winner in my book!

 

The macadamia nuts lend a fun occasional crunch with a wonderful flavor as well.  The pineapple taste is not very pronounced, yet the juices contribute to the incredible moistness of the cookie.  The simple taste of the cookie base is perfectly offset by the rich cream cheese icing.  Although half of my family enjoyed them without icing!{PINEAPPLE DROP COOKIES}

1 c. shortening
1 tsp. vanilla
1 1/2 c. sugar
3 eggs
1 can (20 oz.) crushed pineapple, undrained
1/2 c. hot water to which 1 tsp. baking soda has been added
4 c. flour
3/4 tsp. salt
1 tsp. baking powder
1 c. chopped macadamia nuts

Cream together shortening, vanilla, sugar, and eggs.  Add hot soda water and mix until incorporated.  Mix in crushed pineapple.  Stir together flour salt, baking powder, and nuts in a separate bowl.  Add flour mixture to wet mixture and mix until incorporated.  Drop by the spoonfuls onto lightly greased cookie sheet.  Bake at 350 degrees Fahrenheit for 15-20 minutes (I did 15).  Once cool, store in an air-tight container and they’ll get really moist!

Cream Cheese Frosting:
1 block (8 oz.) cream cheese, softened
1/2 c. butter, softened
4 c. powdered sugar
1 tsp. vanilla

Mix all ingredients together in the bowl of an electric mixer until a very creamy, whipped consistency is achieved.  Frost cookies, and sprinkle with additional macadamia nuts, if desired.  Store in an air-tight container in layers, separated by wax or parchment paper.

 

These cookies will take you back in the years to the good ‘ol days!  I remember my Grandma serving us cookies like this when we used to visit her.  They’re unique and simply timeless!

  3. Your cookies look wonderful. One question for clarification: Do you mix in the pineapple with the wet ingredients? And, do you drain the pineapple first or just dump in the whole can? Thanks!

  4. I'm intrigued. I've never heard of pineapple being used in cookies before! Or if I have I clearly wasn't paying attention (there probably weren't any pictures involved to convince me it was a good idea). Challenge accepted! I must attempt these.

  7. I used to make a similar cookie around Christmastime, only it was made with ricotta. They were so yummy, but yours sound even better with the pineapple, cream cheese, and macadamias! Love your use of the ingredients, and thank you so much for hosting this month!!!
