It’s Valentine’s Idea Week here at I Dig Pinterest! Each day I’ll share a fun and festive Pinterest-inspired idea to get you ready for “love day”.
I’m kicking off “Day 1” with a bang!
Let me introduce you to these beauties. Meet the Chewy Chocolate Chip Bar. They’re everything that their title entails and more. They are succulent, soft, chewy, chocolate-y, and just plain amazing. Are they healthy? Heck, no. But they’re worth every calorie, and calories don’t count anyway around Valentine’s Day, do they? I didn’t think so.
I’d been looking for a festive Valentine’s treat to bring to a church potluck. I saw these on Pinterest a few weeks ago…M&M’s, chocolate chips (I may have a chocolate addiction)…that’s all it took and I was hooked.
The recipe provided looked good, but I knew I had an equally good (if not better) one already in my file that we enjoyed growing up. We called them “Chocolate Nut Chewies”, but since getting married, I haven’t made anything with nuts (thanks to the hubby), so I’ve renamed them, and here they are!

**TIP: The trick to a chewy bar is to bake them to absolute perfection. They won’t taste nearly as good if over-baked. Testing with a toothpick won’t work. Just pull them out when the top is a nice light golden brown color, but not too dark. They will set up even more once out of the oven, so keep that in mind.
I one-and-a-half times the recipe and it fits nicely in a cookie sheet. I baked them for 21 minutes. If you want to spruce them up for a holiday occasion, press the festive M&M’s on top right after they come out of the oven.

{CHEWY CHOCOLATE CHIP BARS}
2/3 c. shortening
2 c. brown sugar
3 eggs
1 t. vanilla
2 c. flour
1 t. baking powder
1 c. chopped nuts (optional)
1 7 oz. pkg. semi-sweet chocolate chips
1/2 t. salt
Combine shortening, sugar, eggs, and vanilla and beat. Stir together flour, baking powder, and salt. Add dry to wet ingredients and mix. Stir in nuts and chocolate chips. Spread in greased 9×13 pan (for a single batch). Bake at 350 degrees for 25 minutes.
