The other night, I was telling one of my friends that I wasn’t sure what goodie I was going to bring to my activity for 10 and 11 year old girls. I told her I wanted it to be St. Patrick’s Day themed, and she immediately recommended these.
I have to give a disclaimer that these are not a Pinterest find, but they are just that amazing, so I have to share. I knew they would be delicious, but I had no idea they could taste as ridiculously fantastic as they do. They are salty, sweet, crunchy, nutty…phenomenal to the taste! I promise you won’t be able to stop at just one!
Another twenty points to their credit…they require three ingredients and can be made in a matter of minutes!
They are a perfectly yummy (and cute) St. Patrick’s Day treat!
{POT OF GOLD TREAT}
Yield: At least 1 dozen cookies
24 Ritz Crackers
1 cup smooth peanut butter
2 cups butterscotch chips
Spread half of the crackers with peanut butter. Top each with a second cracker. In the top of a double boiler, melt butterscotch chips. You can also just melt them in the microwave in 30 second increments, stirring in between. Dip sandwich cookies into butterscotch. Place on waxed paper to set.
