Get ready for all those summer gatherings with this Potluck Pasta Salad recipe! It’s the perfect dish to share with a crowd and will please everyone at the party!
I love a good pasta salad! When the warmer months hit, I crave pasta salad! What I love about this is that you can add in whatever veggies you like! I chose cherry tomatoes, olives, cucumbers, broccoli, baby carrots and radishes, but feel free to add other or omit any that you aren’t a fan of! I think this would be great with mushrooms or artichokes too! And if you’d like to make it more of a main dish than a side, simply add in diced pepperoni, ham, salami or prosciutto!
This salad is super simple to make too! Just cook the pasta (be sure to salt your water), drain and toss it together with the veggies, some Italian dressing and Feta! It couldn’t be easier! If you’re not a fan of Feta, feel free to add in mozzarella cubes instead. It’s hard to go wrong with this one!
We hosted a BBQ last week for some of my husband’s coworkers and I served this there. Everyone went crazy for it! We did have some leftovers, which I enjoyed eating for lunch in the following days.
Pasta Salad is one of those summer staples for all the potlucks and gatherings that happen! I love that I can make it ahead of time, then just freshen it up with some more Italian dressing just before serving. The pasta soaks the dressing in, so you will need to add more and toss everything together again just before everyone enjoys it.
I love to use colorful pasta to make this salad look even more impressive and vibrant!
Feel free to add in as much or as little of each veggie as you like! The amounts really are up to you!
Potluck Pasta Salad
Ingredients
- 1 box 16 oz pasta, cooked according to package directions (salt the water); drain and let cool
- Diced radishes
- Chopped baby carrots
- Chopped broccoli
- Sliced black olives
- Cherry tomatoes halved
- Sliced cucumber
- Feta or mozzarella cubes
- Italian dressing
Instructions
- Cook pasta according to package directions in salted water. Drain, then let cool completely. Run under cold water for a little bit if you need to speed up the process.
- Put pasta into a large bowl, then add in radishes, carrots, broccoli, olives, cherry tomatoes, cucumber, and Feta or mozzarella cubes. Add in as much as you want of the veggies.
- Pour Italian dressing over the top and toss to coat. Add enough to give it great flavor and make the pasta so it's not dry, but not so much that it's swimming in dressing. Cover and place the bowl in the fridge until ready to serve. Just before serving, taste and add more Italian dressing if necessary, then toss to coat. The pasta will soak in some of the dressing so you will probably need to add more.
