Pumpkin Chocolate Chunk Cookie Bars

Welcome fall with these delicious protein-packed Pumpkin Chocolate Chunk Cookie Bars! They’ll have everyone begging for more!

If you know me well then you know that fall is my favorite season. I love summertime too, but I get so excited for September because that’s when I decorate my home with pumpkins, candles and lanterns. It’s also when I start baking all things pumpkin!

I’m so excited to announce that these Pumpkin Chocolate Chunk Cookie Bars were my very first pumpkin dessert of the season. And, boy, were they a phenomenal way to kick it off! I know you’re going to be crazy for these too!

I’ve always loved Kodiak Cakes. I’m a huge fan of the fact that their products are protein-packed, so it’s something I feel really good about feeding my family. And we love how they taste too! I make pancakes for the kids every morning with their Flapjack and Waffle Mix. So good!

So when I heard they came out with an All-Purpose Baking Mix, I couldn’t wait to give it a try!

I thought it would be so tasty and fun to incorporate this yummy baking mix into my fall pumpkin cookie bars! They turned out to be so incredibly soft and completely scrumptious! My kids devoured them, not even knowing that they were loaded with protein! They are studded with chocolate chunks to make them completely irresistible!

If you haven’t started baking with pumpkin yet this season, let this be the way you start! You won’t regret it!

These cookie bars come together in a hurry, thanks to the Kodiak Cakes All-Purpose Baking Mix! You simply throw all the ingredients into the mixing bowl at once, then mix, press into the pan and bake! Don’t forget the chocolate chunks! It really is that simple! And the results will make you smile!

We shared some with our new neighbor and, after taking a bite, he commented on how glad he was that he chose to move in next door to us. šŸ™‚

These are perfect for sending in the kids’ lunches for a yummy surprise, or for taking to fall gatherings. But, just be prepared, because they won’t last long!

Pumpkin Chocolate Chunk Cookie Bars

Ingredients
  

  • 2 1/2 c. Kodiak Cakes All-Purpose Baking Mix
  • 1 large egg
  • 1/3 c. brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. vanilla
  • 1 c. canned pumpkin not pumpkin pie filling
  • 1/2 c. butter softened
  • 1 1/2 c. chocolate chunks divided

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and grease a 9x13" cake pan. In the bowl of an electric mixer, add the Kodiak Cakes All-Purpose Baking Mix, egg, brown sugar, baking powder, baking soda, cinnamon, nutmeg, vanilla, canned pumpkin, softened butter and 1 c. chocolate chunks. Mix until incorporated and press into prepared pan. Sprinkle and press remaining 1/2 cup chocolate chunks on top.
  • Bake for approximately 10-13 minutes, or just until they are done (the bars will start to pull away from the sides). Don't overbake or they'll be dry! Let cool then enjoy!

I love that this is a great way to enjoy pumpkin cookies with less guilt and without all the work of rolling the balls! Cookie bars for the win! I hope you get to enjoy these very soon!

    Yum! These look so good! And they sound so easy, too! I haven't made anything pumpkin yet, but I've got some pumpkin coffee creamer in the fridge that I love putting in hot milk!

      They are super simple to make! One of the easiest and fastest ways to satisfy that sweet tooth craving with less guilt! I love the flavors of fall! I hope you get to start the pumpkin baking soon! :)
