Pumpkin Spice Krispies Treats

These Pumpkin Spice Krispies Treats are a gooey, delightful fall version of your traditional Rice Krispie Treat! I think you’ll agree that more butter plus more marshmallows is a brilliant idea!

Just look at that ooey gooey marshmallow pull! Dry, these definitely are not! If you love your Rice Krispies thick and not short on marshmallows then you’ve come to the right place!

One of these treasures is not nearly enough! Every pocket of melty marshmallow is a pleasant surprise for the taste buds! Combine it with the flavor of pumpkin pie spice and you’ve got a fall treat that will have you begging for more and more!

Be sure to make an extra batch and share these with friends, relatives, neighbors, and random strangers you meet on the street, because these are too good to be kept to yourself. 🙂 Something this yummy just has to be enjoyed by all!

Rice Krispies are such a classic dessert-one that everyone loves and can never grow tired of! But, I’ve revamped the traditional recipe and made it even better and perfectly suited for the autumn season! I’ve always been a fan of simple treats that can be made in a hurry when the sweet tooth cravings call, so Rice Krispies and I have become pretty great friends over the years. 🙂

These only require about ten minutes of your time and you’ll be rewarded tremendously for that small investment!

It’s truly amazing how something so simple and basic can be so incredible! I’m never not in the mood for a Rice Krispie square! Are you the same way?

And typically, even when I’m not feeling ambitious enough to put together another yummy, albeit more complicated, pumpkin spice treat like this Pumpkin Pie Caramel Popcorn or this Pumpkin Snickerdoodle Bread, I can convince myself prettily quickly to whip out some Rice Krispies. Because you just can’t beat dessert in under ten minutes!

Pumpkin Spice Krispies Treats

Ingredients

  • 5 c. crisped rice cereal
  • 6 c. mini white marshmallows for the main portion plus 1 heaping cup for later
  • 1 tsp. vanilla extract
  • 1 tsp. pumpkin pie spice
  • 6 Tbsp. butter

Instructions

  1. Prepare an 8x8 pan by lining it with parchment paper so it hangs over the edges.
  2. Measure out 5 c. crisped rice cereal and 6 c. mini marshmallows in separate bowls to prepare.
  3. In a large pan over medium-low heat, melt your butter with your marshmallows, stirring constantly. Just before the marshmallows have melted all the way (there will still be some smaller lumps), remove the pan from the heat and quickly stir in vanilla extract and pumpkin pie spice. Next, quickly stir in crisped rice cereal until completely coated in marshmallows, then quickly fold in 1 heaping cup of marshmallows and gently press mixture into prepared pan (don't pack it down too much). You may need to butter your hands for this part. Let set, lift from the pan using the parchment paper, then slice and serve.

      I use Pumpkin Pie Spice in bulk this time of year. I definitely need to consult Pinterest for a way to make it myself. :)
