For December’s Mystery Dish Challenge, I baked up some luscious Raspberry Chocolate Crumb Bars that will (possibly literally) knock your socks off! I can’t wait to tell you about them today.
Take a look at the mouthwatering goodness that follows, and try not to drool.
Is it really the end of December? Where does the time go? We had a wonderful Christmas with family. There was lots of laughter, hugs and cheer to go around, just like there should be this time of year.
The month is drawing to a close, which means it’s time for some more Mystery Dish! I bet you couldn’t wait for this day to come again. 🙂 I know I’ve been sitting on the edge of my chair all month eagerly awaiting it.
I love participating in this challenge with a group of very talented bloggers. It’s so fun seeing what they come up with each month. They are amazing. I thoroughly enjoy concocting yummies with a “Mystery Box” of ingredients each month. It’s such a thrill to get those creative juices flowing in the kitchen.
The ingredients this time around were:
Dark Chocolate
Greek Yogurt
Berries
Coconut Oil
Walnuts
Fish
Baby Spinach
Pecorino Romano Cheese
We were asked to use two or three of the options. I upped the ante a little just for the fun of it and used THREE! As you know, desserts are totally my cup of tea, so I followed tradition and made something sweet and savory, something so incredible-tasting that any diet plans will be pushed off another day to partake of this delicacy. Totally worth it. Self control…it’s overrated, right?
Seriously. They’re magically delicious. Loaded with chocolate and more chocolate (need I say more?), mashed fresh raspberries, and crunchy walnuts. Can you say “phenomenal?”
These bars are totally and completely irresistible! The tartness of the raspberries is perfectly offset by the ultra-sweetness of the delectable chocolate layers.
{RASPBERRY CHOCOLATE CRUMB BARS}
Recipe adapted from HERE
2 sticks unsalted butter, softened
1/2 cup brown sugar, packed
2 cups all-purpose flour
1/4 t. salt
1 c. semi-sweet chocolate chips
1 c. dark chocolate chips
1 14 oz. can sweetened condensed milk
1/2 c. chopped walnuts
3/4 c. mashed fresh raspberries
Preheat oven to 350 degrees Fahrenheit. Lightly grease 9×13 baking dish. Cream butter and sugar together. Beat in flour and salt until nice and crumbly. Press 1 3/4 c. crumb mixture onto the bottom of baking dish. Bake for 8-10 minutes or until golden brown.
Stir nuts into reserved crumb mixture. Set aside. Combine sweetened condensed milk and semi-sweet chocolate chips in a microwave-safe dish and heat on medium heat, in 30 second intervals, until chips are melted. Stir until smooth.
Pour over hot crust and spread until even. Sprinkle reserved crumb mixture over chocolate mixture. Drop teaspoonsful of mashed raspberries on top of crumb mixture. Sprinkle with 1 c. dark chocolate chips. Bake for an additional 25-30 minutes. Cool and cut into bars.
I’m not exaggerating in the least when I say these Raspberry Chocolate Crumb Bars have moved to the top of my all-time favorite desserts list. They’re that good.
Decadent and super chocolate-y, these bars are a perfect ladies’ night indulgence, because I’m convinced that chocolate exists just for women. But, ladies’ night or not, partake and feel no shame. The New Year’s resolutions don’t start for a few days, right? 🙂

And seriously, now that you mention it, I think you're right. Chocolate WAS created just for women. I know men who don't like chocolate (these men are unfit for the human race) but I have yet to meet a woman who doesn't have a cocoa indulgence or two. I think this is why women are so smart. We know delicious when we taste it!
And I'm going to note how ironic it is that I say this when the account this is being posted under says Joshua when it should say Joshua and Dani. At least my hubby knows well enough to like chocolate too!
