These Red Velvet Cake Mix Cookies are the perfect Valentine’s Day dessert! They’re festive-colored, topped with a decadent, cream cheese frosting and are absolutely irresistible!
Do you celebrate Valentine’s Day? We love it at our house! The kids and I just decorated the mantel in pink and red, with lots of hearts. We set out their little tin mailboxes, so I can deliver small gifts and treats to them each day in February, leading up to the 14th. We love this tradition!
Then, on Valentine’s Day we always have a special, fancy family dinner and end it with chocolate fondue with all the yummy things to dip for dessert. We call it “Love Day” at our house. It’s a perfect day to celebrate the love we have for each other in our family.
There are certain festive treats my kids beg me to make during the month of February, including these Valentine’s Monster Cookies, this Cupid’s Love Potion Drink, and these Softest Frosted Sugar Cookie Bars. My sweet neighbor absolutely loves these Soft Frosted Sugar Cookies, so we always bake some up and deliver them to her as a Valentine’s gift. And then of course we enjoy the rest to ourselves. 🙂
I’m all about the red desserts, aren’t you? Red velvet just screams “It’s Valentine’s Day!”, am I right? I frosted these with cream cheese icing and then sprinkled them with a little red sugar. They’re so simple and pretty! They start with a red velvet cake mix and then, just a few ingredients later, you’ve got a beautiful red dough to shape into balls and bake to perfection.
My kids are getting excited to hand out class valentines in school on the 14th. I think my son has decided to give out these “Tootsie Pop Valentines” and then my daughter will give these “You’ve left a mark…” Valentines. They’re both so cute and easy to throw together the night before the class exchange.

Yields 18 cookies
Ingredients
- 1 box (15.25 oz) Red Velvet Cake Mix (I used Duncan Hines Signature)
- 6 Tbsp. butter, melted
- 1/2 tsp. vanilla extract
- 1 large egg
- Frosting:
- 4 Tbsp. butter, softened
- 4 oz. cream cheese, softened
- 1/2 tsp. vanilla extract
- 2 c. powdered sugar
- Red sugar sprinkles, optional
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Line cookie sheets with nonstick baking liners or lightly spray with nonstick baking spray.
- In the bowl of an electric mixer, add the cake mix, melted butter, vanilla, and egg. Mix until incorporated.
- Scoop or roll the dough into 1 1/2" balls and place them at least 2" apart on the prepared cookie sheets. Press the dough balls down with the palm of your hand to flatten.
- Bake for 8 minutes.
- Allow the cookies to cool on the cookie sheets for a few minutes before removing them to a cooling rack to cool completely.
- Once the cookies are completely cool, prepare the frosting by creaming together the softened butter, softened cream cheese, vanilla extract and powdered sugar in the bowl of an electric mixer. Whip it until it's nice and creamy and lightens in color, scraping down the sides of the bowl in between.
- Frost cooled cookies and sprinkle with red sugar, if desired.
