Rocky Road Brownies…Easter Style

I love brownies from the box, which is why I rarely make them homemade.  But growing up, we ate only this recipe.  And let me tell you…these give the boxed brownies a run for their money.   Sure, they take a little longer to whip up, but boy are they worth it.

 They’re soft and nutty, ooey, gooey, chocolate-y, and just plain perfect!


Instead of white mini-marshmallows, swap in some cute Easter Bunny Mallows, and they are a colorful spring treat!  I used 2 bags of these.



{ROCKY ROAD BROWNIES}
*This makes a large cookie sheet-size, but you can half the recipe and it will fit in a cake pan.

3 cups flour
3 cups sugar
1 cup natural unsweetened (baking) cocoa
2 t. salt
2 c. shortening
8 eggs
4 t. vanilla

Chopped walnuts (I hesitate to say optional, because they’re SO much better with them!)
2 bags Marshmallows
Cream sugar, shortening, eggs, and vanilla.  In a separate bowl, stir together flour, cocoa and salt.  Add dry ingredients to wet and mix until combined.  Stir in nuts.  Bake on 350 degrees for around 25 minutes.  Pull out of the oven and quickly put marshmallows on top.

Turn oven off, and immediately put brownies back in the oven for about 3 minutes, until marshmallows fluff together as shown below.  You don’t want them to melt too much.
Let cool and then frost with your favorite chocolate icing.
I always make yummy CHOCOLATE BUTTERCREAM FROSTING:
1/2 cup butter
3 1/2 cups powdered sugar
1 t. vanilla
2 heaping spoonfuls of natural unsweetened cocoa (I love Hershey’s)
Add just a little milk at a time and mix until it is a creamy consistency, perfect for frosting!
Cut and enjoy!!
