What’s better than a peanut butter cookie that’s stuffed with a mini Rolo chocolate caramel candy? Not much, I daresay!
When I make a dessert, more often than not, it’s cookies. What can I say, we are cookie monsters around here! But I also love that they are a less-messy treat that we can bring to a friends’ dinner party, especially when there will be lots of kiddos running around eating them on the go. 🙂 We did just that, and I was interested to see that the adults out-ate the kids!
We sat around the table after dinner and played a board game together with a plateful of these Rolo Cookies just staring us in the face. Needless to say, we always had one in our hand while we were making our moves! 🙂
I can’t believe I haven’t already shared this recipe with you, because it’s one that’s very near and dear to my heart and mouth. 🙂
I grew up eating these cookies. My mom is not a peanut butter fan, so she didn’t make them, but we always jumped on the plate when my aunt, who lived next door, dropped by to share some. And then, when I was old enough to bake, I started cranking them out in bulk! Ha!
I’ve since changed the recipe slightly, but they are still the same delicious Rolo Cookie that I remember from my childhood, if not even better!
{ROLO COOKIES}
1 c. sugar
1 c. brown sugar
1/2 c. butter (1 square), softened
1/2 c. shortening
3/4 c. creamy peanut butter
2 eggs
4 Tbsp. evaporated milk
3 c. all-purpose flour
2 tsp. baking soda
3/4 tsp. salt
12 oz. bag Rolo candies
In the bowl of an electric mixer, cream together sugars, butter, shortening, peanut butter, eggs, and evaporated milk. In a separate bowl, stir together flour, soda and salt. Add dry mixture to wet mixture and mix until combined. Grab a cookie-sized portion of dough and place a Rolo in the center. Form the dough in a ball around the Rolo so that it’s all the way covered. Repeat to fill the cookie sheet. Bake at 375 degrees Fahrenheit for 7-10 minutes, or until the bottoms are golden brown, but not too dark. Store in an air-tight container at room temperature.
These cookies are fantastic fresh out of the oven, when the Rolo candies are all melty and ooze from the center when you take a bite. Yum!
