Dinner time just got yummier and easier with these Sloppy Joe Meat-Topped Baked Potatoes! Two family favorite meals combined into one very delicious supper! Everyone will go crazy for these!
I always tell myself that things will slow down when… but they never do. Is it the same for you?
Life is one big roller coaster that goes full speed ahead! So I try to keep our home-cooked meals simple yet still completely hearty and yummy. Pizza is on the menu at least once a week and then I usually cook about three more nights with leftovers or a night of takeout filling in the gaps.
A kind friend brought my family a meal a few months back when we were going through some tough times and it happened to be this tasty sloppy joe mixture! I of course had to get the recipe after my kiddos and hubby could say nothing but good things about it and I was right there with them.

So to mix things up, I thought, why not put it atop a baked potato with some grated cheese and a dollop of sour cream? The results were nothing but scrumptious! It seems I’m always trying to come up with new and exciting ways to ditch the buns when it comes to the classic sloppy joe. Like, for instance, this Grilled Sloppy Joe Pizza that is still a regular at our dinner table during the summer.
Sloppy Joe Baked Potatoes
Ingredients
- Sloppy Joe Mixture:
- 2 lbs. ground beef
- 1 large yellow onion diced
- 1 1/2 cups ketchup
- 2 Tbsp. cider vinegar
- 2 Tbsp. brown sugar
- 1 tsp. minced garlic
- Salt and pepper to taste
- About a dozen medium Baked Potatoes cooked with your preferred method (microwave or oven)
- Shredded cheese optional
- Sour Cream optional
Instructions
- Cook hamburger, breaking up, with onion in a large skillet over medium heat on the stove top until meat is no longer pink. Salt and pepper the meat while it's cooking. Drain grease. Stir in ketchup, cider vinegar, brown sugar and garlic. Cook for ten more minutes over medium heat, stirring occasionally, so sauce and flavors can set in. Add additional salt and pepper to taste if necessary. Remove from heat and serve over baked potatoes with shredded cheese and sour cream, if desired.
This was about the quickest meal I’ve ever put together and it received only praises! Win, win!
I always zap my potatoes in the microwave (using the baked potato setting) to save having to bake them for an hour. Ugh, why does it take so long to bake potatoes?! Anyway, thank goodness for microwaves!
