Fall time is for comforting, warm food like this Slow Cooker Chili! It’ll put a smile on your face and make your taste buds cheer!
Now that school is in session, my evenings got 1o00 times busier. I had a meeting the other evening for my church and was watching kids for a friend at the same time. I also knew that we were going to be hosting a friend for dinner, so I thought ahead and made dinner time so easy by throwing this chili in the crockpot in the morning. I just tossed in a little of this and a little of that, (taking notes as I went, of course), and it turned out so great!
I served it over baked potatoes, because who doesn’t love chili on baked potatoes? They were meant to be together! I always feel like, with soups and chilis, they’re even better the second day, don’t you? That is certainly the case with this slow cooker chili. The flavors really come together, the longer it sits.
You could, of course serve it up the classic way in a bowl with some sour cream, cheese, green onions, and crushed tortilla chips on top. You just can’t go wrong! Loads of beans, green chilis, ground beef, and a perfect blend of seasonings, all in a tomato sauce/beef broth base. These all get slow cooked all day long, so the flavor is out of this world!

When my kids are back in school, I basically only make skillet meals and slow cooker meals. The requirement is that the prep time for dinner has to be 30 minutes or less. This one totally fits the bill. Throw it all in the crockpot in the morning and then forget about it until you’re ready to eat. Serve it up with some slices of fresh homemade bread or breadsticks. Busy school nights call for crockpot chili! It’s hearty and delicious!
What is your favorite part about fall? I love the changing leaves and the cooler temps and sweaters and boots! I love the crisp, morning air and the crunchy leaves beneath my feet. I love baking pumpkin treats and celebrating Halloween with my family. I love trips to the pumpkin patch, hayrides, corn maze fun, and carving pumpkins. There’s just so much to love about fall!
But maybe the thing I love most is all the comfort food! Chili and soup are what comes to mind when I think of comfort food. I just love meals that warm me through and make me grin from ear to ear. Today’s recipe will do just that. I know you’re going to love this chili recipe like we do!
Slow Cooker Chili
Ingredients
- 1 small yellow onion diced
- 1 Tbsp. minced garlic
- 1 lb. ground beef
- 1 can 15.5 oz chili beans (red beans in chili sauce), undrained
- 1 can 15.5 oz light red kidney beans, rinsed and drained
- 1 can 15.5 oz dark red kidney beans, rinsed and drained
- 1 can 10 oz Rotel (diced tomatoes and green chilis), undrained
- 2 cans 8 oz. each tomato sauce
- 2 1/2 c. beef broth
- 2 tsp. cumin
- 1 1/2 Tbsp. chili powder
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. black pepper
- 1 tsp. oregano
- 1/2 tsp. basil
- 1/2 c. diced green chilis
Instructions
- In a skillet over the stove top on high heat, cook and brown hamburger with minced garlic and diced onions, until the meat is no longer pink. Drain the fat, if there is any.
- Add the hamburger mixture to the slow cooker.
- Add chili beans, light and dark red kidney beans, Rotel, tomato sauce, beef broth, cumin, chili powder, salt, sugar, black pepper, oregano, basil, and green chilis to the slow cooker and stir until well combined.
- Cover with the lid and cook on low for at least 8 hours or on high for 4 hours.
- Serve over baked potatoes or in a bowl with your favorite toppings (sour cream, cheese, diced green onions, crushed tortilla chips, etc.)_
