Don’t let the holiday season pass without making these Soft Molasses Cookies! The dough is perfectly spiced, then rolled into balls and then in sugar and baked to soft perfection. Then they’re finished off with a drizzling of a sweet glaze. These are absolutely irresistible!
The other day when I was making these cookies, I ran out of molasses. So I had to make a special trip to the grocery store. I can tell you that these cookies were well worth the trip! They’re perfectly spiced with ginger, cloves and cinnamon. They make you want to cozy up by the glow of the tree while munching and watching a Christmas movie. I’ve been binge-watching Hallmark Christmas movies. I love how predictable and cheesy, yet sweetly romantic they are. 🙂
My family loves to watch a Christmas movie whenever the evening allows. We just saw Home Alone 2. It’s a Christmas classic! There will for sure be time to see the Jim Carrey Grinch, which we always look forward to. It makes us laugh and laugh. And we’ll squeeze in a viewing of The Christmas Story because…leg lamp and marshmallow coat. Need I say more?
Do you have favorite Christmas traditions that you get excited about each December? We love to deliver goodie plates to friends and neighbors. I’m still trying to finalize what will go on those plates this time around. I’m thinking this 5 Minute Mint Fudge, this Cinnamon Caramel Popcorn and these Chocolate Turtle Cookies definitely have earned a spot. And I’m sure I’ll throw on a few of today’s Soft Molasses Cookies, because it just wouldn’t be Christmas without them!
On Christmas morning, we enjoy a delicious, savory Breakfast Casserole to balance out all those sweets. And then for Christmas dinner, it’s baked ham, cheesy potatoes and homemade rolls. I love all the food that comes with the holiday season. Don’t you?
I also love a good gingerbread cookie! They’ve got to be soft, though. These Molasses Cookies totally fit the bill. They’re totally incredible! Is there a certain cookie that you think of when you think of Christmas? This is that cookie for me. But I believe that you just can’t have too many gingerbread cookie recipes in your arsenal. These ones have definitely earned their place in the gingerbread cookie lineup.

Soft Molasses Cookies
Ingredients
- 3/4 cup salted butter softened
- 1 cup granulated sugar plus 1/4 cup for rolling
- 1 large egg
- 1/4 cup molasses
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. cloves
- 3/4 tsp. ginger
- 2 1/4 cups all-purpose flour
- Drizzle:
- 1 cup powdered sugar
- 1 1/2 Tbsp. milk more as necessary for thinning
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In the bowl of an electric mixer cream together softened butter, sugar, and egg until fluffy. Add the molasses and mix just until incorporated.
- In a separate bowl, whisk together baking soda, salt, cinnamon, cloves, ginger and flour.
- Add flour mixture to wet mixture and mix just until incorporated.
- Scoop or roll dough into 1 1/2" balls, roll them in sugar, then place them on a nonstick baking mat or greased cookie sheet 2" apart. Bake for 7 to 8 minutes. Don't over bake or they won't be soft!
- Let cool slightly, then carefully remove them to a cooling rack. Whisk together powdered sugar and milk (just enough for thinning) and drizzle over cookies. Allow the glaze to set and the cookies to cool completely. Store in an air tight container.
