I love playing basketball, but don’t typically watch the tournaments on TV throughout March. However, I’m never opposed to an excuse to get together with others and eat yummy food! Food preparations at my house for gatherings are always simple so I can enjoy as much time as possible with fun friends.
Today’s recipe involves oodles of tomatoes, green chiles, a dash of jalapeños, cilantro and cheese and is easy and oh so tasty! I served it up on a slices of baguette and it was divine!
I’m drooling just looking at these beauties again! Do you want to reach in and snatch one too? I wish that were possible, because I’d totally share! Something this good just can’t be kept to oneself.
I live in the southwest and tend to crave all flavors that are common to the culture here. When we first moved to the area, I admit that I was totally weirded out by all the green chile everywhere. But now I’m obsessed with it too! I also can’t get enough of chipotles and jalapeños! They just add so much spunk and interest to recipes, and that’s what I’m all about.
So give me a can of RO*TEL, and I’m one happy girl. And then I’ll proceed to make a delicious southwestern bruschetta with it. 🙂

RO*TEL is easily found at Walmart in the aisle with all the canned tomato products.You’ll also need a few other seasonings and a few baguettes or French or Italian bread.
{SOUTHWEST STYLE TOMATO BRUSCHETTA}
2 cans (10 oz. each) RO*TEL Diced Tomatoes and Green Chilies, drained
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. chipotle chili powder (or less if you’re not keen on spice)
1/8 tsp. salt
1/8 tsp. pepper
1/4 tsp. cumin
1 Tbsp. jalapeño, seeds and membranes removed, diced finely
2 Tbsp. chopped fresh cilantro
Shredded Monterey Jack or Pepper Jack cheese
Olive Oil
Start by emptying two cans (drained as best you can) of RO*TEL into a large bowl.
Add all your seasonings, along with diced jalapeño and chopped cilantro.
Cut your bread and brush each piece with a little olive oil. This will provide a protective barrier so the bread won’t get soggy when we add the tomato mixture.
Add a pinch of shredded cheese to each piece.
Now add a spoonful or so of the tomato mixture on top.Place in an oven broiler and broil on high heat for 4-5 minutes, staying close by and checking it often, until the bread is golden brown around the edges and cheese is melted. Top with additional cilantro, if desired.
