A friend of mine came over for dinner one Friday night with her cute kids while our hubbies took the boys to a father and son’s camp out. Hooray for girl time!
I picked up a pizza and she brought a delicious “Southwestern Chopped Salad” that she’d found on Pinterest for a side. I of course asked her if I could share the recipe (originally from The Garden Grazer) with everyone, and she agreed.
My first set of pictures didn’t turn out, but I can’t say that I was disappointed, because I got to make it again very soon after for my husband. Even though it is a salad and there’s no meat in it, he gave it two thumbs up, and that’s saying something.
If you want it to be a little more hearty, top it with some grilled chicken or shredded BBQ pork. Mmmmmm…
I just crumbled some Gorgonzola cheese over the top (Blue Cheese or Feta would also be yummy), served it with a side of fruit, and called it a meal.
Combined with the citrus-y Cilantro Dressing, it’s a delicious, light and healthy summer dish.
{INGREDIENTS}
Large head of romaine
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes (I just de-seeded and diced a few regular tomatoes)
2 cups corn (I used canned, drained)
5 green onions
Creamy Cilantro-Lime Dressing (recipe below) or other dressing of choice
{INSTRUCTIONS}
Finely chop romaine, bell pepper, tomatoes, and green onions.
Place all ingredients in a large bowl and stir to combine.
Toss with desired dressing.
{CILANTRO-LIME DRESSING}
Yields 3/4 cup dressing
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain Greek yogurt
2 Tbsp. fresh lime juice
1-2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white vinegar
1/8 tsp. salt
1/2 cup plain Greek yogurt

The cilantro gives the dressing a pretty green tint
and a very yummy flavor!

Puree all ingredients in a blender or food processor until smooth.
Taste and adjust seasonings if necessary. Add in pepper or a little cumin if you like, also.

**I thought it tasted a bit tart, so I added in a teaspoon of sugar.
**If you don’t have Greek yogurt on-hand, low-fat or regular sour cream works too.

Salads are a popular meal in my home, eaten on their own as as part of a meal so finding a new dressing for a salad is always exciting. When the weather warms up, I will be adding this salad to my menu.
