It wouldn’t be summer time without some Strawberries ‘n Cream Crumb Bars! Everyone at the potluck will go wild for them!
I love a good crumb bar! They’re sort of like pie, but without all the work! And the filling is glorious! Especially in these! The creamy strawberry concoction nestled between the crumb layers is nothing short of perfection!
A while back I shared these phenomenal Dutch Apple Pie Bars and these Dutch Peach Pie Bars. As fantastic as those recipes are, I felt like there was a void that still needed to be filled. And that void was strawberries! Strawberries and summer go together like peanut butter and jelly! I crave all things strawberry during the warmer months. And that’s saying something, because you know how I love my chocolate confections. 🙂
So I knew I needed to add to the ever-growing collection of yummy strawberry desserts on this blog. This one’s a keeper! The combo of cream cheese and fresh strawberries, a buttery-crumbly crust and topping just cannot be beat!
They bake up in a hurry, so they’re ready for that BBQ in no time at all! I bet you could sub in raspberries or blueberries, if you’d like. Now I can’t wait to try those versions too!
Strawberries ‘n Cream Crumb Bars
Ingredients
- Crust:
- 2 c. all-purpose flour
- 1 c. old-fashioned oats
- 2/3 c. brown sugar packed
- 3/4 c. butter melted
- pinch of salt
- 1/4 c. slivered almonds
- Filling:
- 12 oz. 1 1/2 packages cream cheese, softened
- 1 1/2 tsp. vanilla extract
- 2 1/4 c. powdered sugar
- 1 c. diced fresh strawberries
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a 9"x13" pan with parchment paper so it hangs over the sides.
- In the bowl of an electric mixer, mix flour, oats, brown sugar, melted butter, salt and almonds until crumbs form.
- Reserve 3/4 cup of the mixture and set aside for the topping.
- Press the remaining crumb mixture into the parchment-lined pan. Bake for around 9-11 minutes.
- While that's baking, prepare the strawberry layer by creaming together softened cream cheese, vanilla extract and powdered sugar in the bowl of an electric mixer until creamy and no lumps remain. Mix in strawberry pieces. Spread mixture over baked crust, sprinkle reserved crumb mixture evenly on top, then return pan to the oven and bake for approximately 20 more minutes.
- Let cool completely, then slice and serve.
