We were having a conversation at our house the other day about which of my four children are most like me. We decided that my second daughter was because her sweet tooth perfectly matched her mother’s. 🙂
All of my kids love dessert, but little J wants to eat treats for breakfast, lunch and dinner. She totally gets me and I completely understand her too. We’re two peas in a pod.
So when we wake up and I ask what the kids want for breakfast and hear from the other room, “Cake!” I know exactly who the response came from and I totally can’t blame her. We’re usually on the same brain wave.
I mean, when something as good as a Strawberry Shortcake Dessert Taco exists, it’s basically the first thing I think about in the morning and the last thing on my mind before bed. Please tell me I’m not alone in my cravings!
We always keep a large stock of Eggo Thick & Fluffy Original waffles in our freezer for easy snack and breakfast options. My kids can’t get enough of them. Did you know that Eggo Waffles now have colors & flavors from natural sources?! These waffles are just like the ones you can make at home, but a million times more convenient!
But who says waffles are just for breakfast? Not me!
So I found a way to turn a classic favorite treat-Strawberry Shortcake-into a delicious concoction that’s too good to be reserved just for Taco Tuesday.

My kids got home from school just as I finished photographing these beauties and couldn’t wait to dig in!
Here’s how to make them:

Strawberry Shortcake Dessert Tacos
Ingredients
- For the cheesecake filling:
- 8 oz. cream cheese softened
- 1 tsp. vanilla
- 1 1/2 c. powdered sugar
- 2 c. whipped topping
- For the Strawberry Syrup:
- 1 c. mashed strawberries
- 1/4 c. water
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- Eggo® Thick & Fluffy Original 6ct
- Additional whipped topping and fresh sliced strawberries for garnish optional
Instructions
- For the cheesecake filling, in the bowl of an electric mixer, whip together cream cheese, vanilla and powdered sugar until creamy and smooth. Fold in whipped topping. Store in the refrigerator until ready to use.
- For the strawberry topping, mash berries and pour them into a small sauce pan. Stir in water, sugar and cornstarch. Over the stovetop on medium-high heat, bring mixture to a full boil while stirring constantly. Mixture will thicken and darken in color as it cooks. Remove from heat and allow to cool completely (place it in the fridge to speed up the process).
- Toast Eggo Thick & Fluffy Original waffles until nice and crispy. Put tacos together by folding the Eggo Thick & Fluffy Original waffle in half, then putting a large spoonful of cream cheese mixture in the center. Top with a spoonful of strawberry syrup. Add a dollop of whipped topping and a fresh strawberry slice for garnish, if desired.
