Strawberry Soda Pop Cake

This Strawberry Soda Pop Cake is pure heaven! A doctored up white cake mix base with strawberry soda sauce that trickles down through the crumbs, then vanilla pudding, whipped topping and fresh strawberries to finish it off!

I’m really looking forward to spring time! How about you? The temps have been in the single digits here this week, and it has me longing for warmer weather and sunshine! I can’t wait to put the coats away and don the shorts and t-shirts again! When I think of spring and summer time, all the berry desserts come to mind. This Lemon Raspberry No Bake Cheesecake, these Strawberry Shortcake Cookies and this Deluxe Strawberry Banana Cream Pie are some of the first that pop into my head.

You know I’m totally a cookie kind of gal, when it comes to my desserts, but I’ll never say “no” to a delicious slice of cake. Especially when it involves strawberries, pudding and whipped cream. My kids are crazy for strawberry soda and I really don’t buy it for them very often, so they were ecstatic to see me bring it home to make this cake. They couldn’t wait to divide up the leftovers. 

This cake resembles a Strawberry Shortcake in taste. What’s not to love about that?! It’s a poke cake, in that you use a fork to poke little holes into the cake and then pour the strawberry soda and sauce over so it can nestle into those tiny tunnels and create an incredible strawberry flavor explosion!

My family went wild for this cake and I know yours will too! I usually can’t bring myself to make a regular cake mix, so I doctor it up to take it to the next level. The additions of sour cream, milk and vanilla make this white cake incredible! As with all cakes, be careful not to over bake. Set the timer for less time than the recipe calls for and then check it every so often with a toothpick. When the toothpick comes out with moist crumbs on it, it’s done! 

This photo shows the luscious layers that you’ll get to enjoy when you make this cake. Notice I said “when” not “if”. 🙂 Because, trust me, you’re going to want to make this cake ASAP! It’s absolutely delightful! It’ll have you wishing for spring! It can’t come fast enough for me!

The strawberry poke sauce is made with strawberry soda and a packet of strawberry gelatin. It’s so yummy! Let it all refrigerate for at least an hour so the flavors can really come together and then stand out in all their phenomenal glory.

Ingredients
  

  • For the cake:
  • 1 box 16.25 oz White Cake Mix (I used Betty Crocker)
  • 3 large eggs
  • 1 tsp. vanilla extract
  • 3/4 c. milk
  • 1/2 c. sour cream
  • 1/2 c. vegetable oil
  • For the strawberry sauce:
  • 1 box 3 oz strawberry gelatin
  • 1 c. strawberry soda
  • Pudding layer:
  • 1 box 3.4 oz vanilla instant pudding and pie filling (made according to package directions and let it set up in the fridge)
  • 1 tub 8 oz whipped topping (or make fresh whipped cream)
  • Fresh strawberries for topping

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Spray a 9"x13" pan with nonstick baking spray.
  • Prepare the cake batter by mixing together cake mix, eggs, vanilla, milk, sour cream and vegetable oil in the bowl of an electric mixer, just until combined.
  • Pour batter into prepared pan.
  • Bake for approximately 25-30 minutes (every oven is different, so check it often to prevent overbaking). Check with a toothpick inserted into the center. When it comes out with moist crumbs, it's done.
  • Let the cake cool completely on a cooling rack. While the cake is cooling, prepare the pudding according to package directions and allow it to set up for at least a few minutes in the fridge. Use a fork to poke holes into the cake.
  • Prepare the strawberry sauce by stirring together strawberry gelatin packet and strawberry soda until the gelatin is completely dissolved. Pour over the cake evenly.
  • Spread prepared vanilla pudding over the cake. Spread whipped topping or whipped cream over the pudding. Refrigerate until ready to eat.
  • Just before serving, top with sliced fresh strawberries. Slice and enjoy.
