Summer time is for light and refreshing meals like this Summer Citrus Salad! It’s loaded with good things from pink grapefruit to mandarin oranges to quinoa, Mariani Probiotic Pitted Prunes, sliced almonds, and mixed greens, then topped with the most amazing homemade lemon dressing!

The other day I was thinking about how I could incorporate citrus fruit into a lunch time salad, and I made this happy recipe discovery that I will share with you today! Citrus was meant to be paired with mixed greens, quinoa and ! I think you’ll agree when you try this!

Summer Citrus Salad
Ingredients
- Lemon Dressing:
- 1 tsp. lemon zest finely grated
- 3 Tbsp. fresh squeezed lemon juice
- 1 1/2 tsp. sugar
- 1 tsp. Dijon mustard
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. olive oil
- 1/2 tsp. water
- 1/8 tsp. garlic powder
- Salad:
- 2 handfuls mixed greens
- 4 Mariani Probiotic Prunes
- 1 Tbsp. sliced almonds
- 1/8 c. quinoa cooked according to package directions
- 1 Tbsp. green onions diced
- 1/8 c. mandarine oranges
- 1/8 c. grapefruit chunks
Instructions
- To make the dressing, whisk together lemon zest, lemon juice, sugar, Dijon mustard, salt, pepper, olive oil, water, and garlic powder in a small bowl. Place in an airtight container and refrigerate until ready to use. Be sure to give it a good stir before drizzling over the salad.
- Place the mixed greens on a plate, then layer and pile on the Mariani Probiotic Prunes, almonds, quinoa, green onions, mandarine oranges and grapefruit chunks in whatever order you prefer. Drizzle the dressing over and enjoy!
