Summer time is for light and refreshing meals like this Summer Citrus Salad! It’s loaded with good things from pink grapefruit to mandarin oranges to quinoa, Mariani Probiotic Pitted Prunes, sliced almonds, and mixed greens, then topped with the most amazing homemade lemon dressing!
When it’s hot outside, I crave foods that aren’t too heavy but yet are satisfying and that will make me feel good afterwards! Which is why, more often than not, for lunch during the summer, you’ll find me enjoying a salad of some sort!
The other day I was thinking about how I could incorporate citrus fruit into a lunch time salad, and I made this happy recipe discovery that I will share with you today! Citrus was meant to be paired with mixed greens, quinoa and Mariani Probiotic Prunes! I think you’ll agree when you try this!
If you’ve followed this blog for any amount of time, you’ll know that I have a sweet tooth. I do love my desserts! So, as a result, I really strive to achieve a proper overall balance in my diet. I mentioned that salad is on the menu for lunch often so I can work in my fruits and veggies. Another thing I’ve recently been doing is to incorporate prunes as part of my daily nutrition routine. Have you ever tried prunes?
Mariani Probiotic Prunes support overall wellness and digestive health, so I can feel good and be at my best! As a busy mom of four young ones this is key! Mariani prunes are a prebiotic, which the probiotic needs to feed off of. Prunes also have additional vitamins that are great for health & wellness. What’s not to love?!
Go HERE to watch a video explaining more about the benefits of Probiotic Prunes.
The Ganeden BC30 probiotic in Mariani Probiotic Prunes is unique. They are designed by nature to survive and thrive in conditions other probiotics cannot. By surviving, Ganeden BC30 delivers active probiotics ten times more effectively than the probiotics in yogurt.
Mariani Probiotic Prunes are a great source of fiber and contain the antioxidant Vitamin A & E. I’m happy to announce that Probiotic Prunes from Mariani are made using California grown prunes too! There are so many good reasons to make prunes a part of our daily diet!

Do you know what probiotics do? I’ve recently learned all about them and wanted to let you in on a few fun facts! Probiotics keep your gut healthy and enhance the absorption of nutrients. Did you know that 70% of your body’s immune system is in your intestinal tract? So it’s important to keep it in tip top shape because it’s good to feel good, am I right?!
Today’s salad includes ingredients that will leave you feeling amazing about the meal choice you just made! The citrus fruit with the greens tastes incredible, but then you add the lemon dressing and the taste buds really start singing! This salad is so easy to put together! The dressing literally takes minutes to whip up. Trust me when I say you’re going to want this for lunch every day!
