When back to school busy evenings have you wondering if there’s time for a home cooked meal, look no further than this easy Summer Medallion Salad! It comes together in around 30 minutes and will have everyone around the dinner table smiling from ear to ear!
The kids are back in school and we’re trying to settle into our new routine. That alarm clock seems to go off all too early every morning! After the kids get home from school, they work on homework, practice the piano and then there’s a little bit of time to play before dinner.
It seems like that 6 o’clock hour rolls around so quickly every evening! If I’m not prepared, it catches me off guard. So one of the things I try to do with all the back to school busyness is to meal plan and make grocery lists. It doesn’t take long, but it makes a huge difference! Maintaining a system of organization with dinners goes a long way in helping us stay within budget and not have to eat out often.
I keep my fridge stocked with easy options like this Smithfield Garlic & Herb Loin Filet to leave the guesswork out of dinnertime! It cooks up quickly and is so easy to switch up by adding in different sides. Today I served it with diced potatoes, onions and carrots. The pork is so tender and flavorful!
Smithfield® pork tenderloins are so versatile too, as you can slice them or dice them to help them cook faster. Plus, they include real, all natural ingredients and 100% fresh pork cuts. You can really taste the difference! They come perfectly marinated and perfectly seasoned so the yummy, flavorful dinner basically makes itself! I love when I can put a delicious home-cooked meal on the table without breaking a sweat!
You could win a trip to wine country with Smithfield® Marinated Fresh Pork and Gallo® Family Vineyards. Sweepstakes information and rules can be found HERE.
Smithfield® pork is easy to find in the meat section at your local Walmart.
Here’s how to quickly put it all together:
Preheat the oven to 425 degrees Fahrenheit. First, dice your carrots thin and cube your potatoes small (1/2″). I wished I would have cut my veggies even thinner and smaller so they would have cooked even faster. Slice a large yellow onion.
Slice your Smithfield Garlic & Herb Loin Filet into thin medallions (about 1/2″ thick or a little less). Arrange all the veggies on a cookie sheet. Make your seasoning for the veggies by combining olive oil, rosemary, thyme, minced garlic, salt and pepper. Arrange your pork medallions on the cookie sheet (try to get everything into a single layer).
Drizzle the olive oil mixture over everything and place the pan in the oven. Bake for approximately 20 minutes, or just until pork is cooked through and veggies are tender.
See, I told you it was easy!
I hope your transition into back to school goes smoothly! One thing’s for sure, we’ll be enjoying simple and delicious meals like this one for the entire school year!
