The kids are back in school and we’re trying to settle into our new routine. That alarm clock seems to go off all too early every morning! After the kids get home from school, they work on homework, practice the piano and then there’s a little bit of time to play before dinner.
It seems like that 6 o’clock hour rolls around so quickly every evening! If I’m not prepared, it catches me off guard. So one of the things I try to do with all the back to school busyness is to meal plan and make grocery lists. It doesn’t take long, but it makes a huge difference! Maintaining a system of organization with dinners goes a long way in helping us stay within budget and not have to eat out often.

Here’s how to quickly put it all together:
Preheat the oven to 425 degrees Fahrenheit. First, dice your carrots thin and cube your potatoes small (1/2″). I wished I would have cut my veggies even thinner and smaller so they would have cooked even faster. Slice a large yellow onion.
Slice your Smithfield Garlic & Herb Loin Filet into thin medallions (about 1/2″ thick or a little less). Arrange all the veggies on a cookie sheet. Make your seasoning for the veggies by combining olive oil, rosemary, thyme, minced garlic, salt and pepper. Arrange your pork medallions on the cookie sheet (try to get everything into a single layer).
Drizzle the olive oil mixture over everything and place the pan in the oven. Bake for approximately 20 minutes, or just until pork is cooked through and veggies are tender.

Summer Medallion Salad
Ingredients
- 1 Smithfield Marinated Fresh Pork Tenderloin I used Roasted Garlic & Herb-sliced into medallions (around 1/2" thick or a little less)
- 2 large carrots peeled and sliced thin
- 1 large onion sliced into rounds and pieces separated
- 2 large yellow potatoes diced small (1/2" cubes)
- 1/3 c. olive oil
- 1 Tbsp. minced garlic
- 1 tsp. dried rosemary
- 1 tsp. dried thyme
- 1 tsp. salt or to taste
- 1/2 tsp. pepper
Instructions
- Preheat oven to 425 degrees Fahrenheit. Arrange pork medallions and carrots, onions and potatoes in a single layer on a large sheet pan with sides.
- In a small bowl, stir together olive oil, minced garlic, dried rosemary, dried thyme, salt and pepper. Pour over the pork and veggies.
- Place pan in the oven and bake for approximately 20 minutes, or just until the pork is cooked completely through and the veggies are tender. Remove the pork pieces to a plate and stir the veggies around on the pan before serving to distribute the seasonings evenly. Enjoy!
