Tex Mex Stuffed Shells

Have a weekend-looking meal on a busy week night with these easy Tex Mex Stuffed Shells!  The preparation couldn’t be easier and the addition of Campbell’s Soup makes them totally yummy in the tummy!

Has March been flying by for you?  I can scarcely keep track of which day is which.   I swear I’m getting shorted on my 24 hours.  🙂
We’ve had lots of busy-ness going on in our family with parent teacher conferences, music lessons, church responsibilities, and of course some fun too!  My daughter’s looking forward to spring break, which is in just a few short weeks.  We’re planning a fun two-day trip to the sand dunes.  Nothing too elaborate, but the kids really enjoyed our last experience there.
So amidst all this chaos, I’ve been slacking on my meal planning.  I find myself at 3:00 in the afternoon, thinking…
“Oh boy, what are we going to have for dinner?
Is it really that time again?
Hmmmm….what can I make with items from my pantry and fridge?  I refuse to go to the store.
Oh why can’t dinner just make itself tonight?”
Sound familiar?
I keep my pantry fully stocked with Campbell’s Soups for Easy Cooking for nights just like these, when my energy is dwindling and yet the family still yearns for a good home cooked meal before taking on the evening’s activities.

I found them (in four different, wonderful varieties) in the soup aisle at Walmart.

The star of today’s recipe is Mexican Style Tomato!  Find a coupon, valid for 30 days past 3/13, HERE.  This soup is an easy, flavorful substitute for Condensed Tomato Soup in any recipe!

Last week I shared some phenomenal Chicken Portobello Tacos (Have you tried them yet? They’re amazing!) that practically throw themselves onto your dinner plate and beg to be eaten, and today I’m sharing another tasty dinner that can be made in around 30 minutes!Because I know we all wish there was more time in a day to get things done, I’m going to save you some precious minutes so you can spend it on other more important things…you know, like kicking back, relaxing on the sofa.  Hey, it needs to be done, so you might as well be the one to do it.  🙂

{TEX MEX STUFFED SHELLS}

1 pound ground beef, cooked, drained, and crumbled
1 bell pepper, diced
1 onion, diced
1 clove garlic, minced
1 jalapeño, diced finely, seeds and membranes removed
2 cups Campbell’s Soups for Easy Cooking, separated
14-15 large pasta shells, cooked
Cheddar Cheese, shredded
Sour cream, green onions, lettuce, and tomatoes for garnish (optional)

Preheat oven to 350 degrees Fahrenheit and get the shells cooking in boiling water.  In the meantime, in a skillet, add the hamburger, garlic, jalapeño, green pepper and onion.

Cook until meat is no longer pink and peppers and onions are soft.  Drain excess fats.

Stir in 1 cup Campbell’s Soups for Easy Cooking in Mexican Style Tomato.

Fill the cooked shells with hamburger mixture.

Pour 1 cup sauce over shells (add more if you’d like).  Cover with foil and bake for 10 minutes.  Remove from oven, uncover, and sprinkle cheese over shells. Bake, uncovered, for another 5 minutes, or until heated through and cheese is melted.  Add garnishes, if desired.
