Are you a fudge lover? I am…all the way! Especially since it usually involves CHOCOLATE! Yumm-o!
I’m not sure why, but I rarely make fudge. It’s about the easiest dessert to throw together, but I still just don’t-unless it’s Christmas time. When the holidays come around, I always get in the mood for some soft, rich, chocolate-y goodness. Well that statement isn’t fully correct. I’m always in the mood for chocolate-day, night, breakfast, lunch, dinner, holidays or not. 🙂
I’ve made it clear in some of my past posts that I love Peppermint. It screams, “It’s the holidays!” and it’s delicious. The end.
So without further ado, meet my new best friend in food for this wonderful time of year…White Chocolate Peppermint Fudge.
She’s gorgeous, out-of-this-world decadent, and completely delectable.

There. Are you on your way to the store yet? This recipe requires three ingredients, people. THREE! Isn’t that amazing?
I whipped some up, bagged it in holiday-printed cellophane, and gave it to a few neighbor friends as Christmas gifts.

{WHITE CHOCOLATE
PEPPERMINT FUDGE}
1 pkg. (12 oz.) white chocolate chips (Use Hershey’s or Nestle Tollhouse, because Ghirardelli doesn’t melt properly)
1 can (14 oz.) sweetened condensed milk
1 pkg. (10 oz.) Andes Peppermint Crunch Baking Chips
Line an 8×8 casserole dish with foil. Lightly spray foil with butter spray. Cover the bottom of your pan with peppermint chips. In a large sauce pan, add white chocolate chips and sweetened condensed milk and heat over medium low heat on stove top, stirring constantly, until all of the chocolate has melted. Stir until smooth.
Immediately pour the mixture over your peppermint chips in the pan. Sprinkle with remaining peppermint chips. Press down slightly. Use as much or as little as you like. The peppermint flavor is wonderful against the white chocolate of the fudge, so I was generous with the peppermint chips. Let cool on the counter for a while and then cover in plastic wrap and place in the fridge to cool/set completely. It’ll keep much longer in the fridge. Let cool for a couple of hours, then cut into bite-sized pieces or huge chunks (if you’re like me).
What a glorious confection! A soft, rich white chocolate fudge sandwiched in slightly crunchy layers of Peppermint Crunch Bits. It’s simply phenomenal.
We all know how most men feel about rich desserts. My husband is not a fan, but he did somersaults for this White Chocolate Peppermint Fudge. I had to hide it (from him and myself) so I’d have some to give away.
