Triple Chocolate Cookies

 Every day is a better day with lots of chocolate in it! Make these Triple Chocolate Cookies and you’ll smile from ear to ear! 

Today is my 36th birthday! I swear every year goes by more quickly than the last, the older I get. Does it seem like that for you? Though I feel like I’m a completely different person than I was in high school, one thing remains the same, and that is my love for and devotion to chocolate. 

If there’s one thing I’ve learned in my 36 years, it’s to eat the dang cookie. Trying to deny myself sweets has never worked and only ends up in me not being able to stop thinking about them. And when I’m old and have that added perspective on life, I know I’ll regret not eating the cookie. So every day, I look forward to a treat. I usually wait until 4 in the afternoon to have it, because that’s when I want to eat all the things. And then I go on my merry way with a very big smile on my face.

Life is too short to not enjoy good food. So today, I’ll be eating lots of chocolate and pretending that calories don’t count on birthdays. 🙂 My kids still talk about my birthday a few years back, when I literally ate chocolate cake for breakfast, lunch and dinner. So bad, but so good! And, hey, it was my birthday, so I could do anything I want.  I really took advantage of that. 🙂

Today I’ll be going for a nice run, then treating myself to a pedicure. Then tonight my husband and I will be heading to dinner at The Melting Pot for some scrumptious fondue. My idea of the perfect day!

I don’t know if you can tell from the photos, but these Triple Chocolate Cookies are BIG. They are jam-packed with chocolate. I wouldn’t have it any other way. 🙂 No amount of chocolate is too much for me, haha. This batch makes 12 phenomenal cookies. 

I melted semi-sweet chocolate with butter for the dough, then stirred in semi-sweet chocolate chunks and milk chocolate chips. Oh boy, you’re not going to be able to resist these! I sure couldn’t! 

You’ll need some half baking sheet pans for this recipe, as well as a good spatula for removing the cookies from the pans. This Pampered Chef Mini Spatula is the only one I use. These Di Oro Silicone Spatulas are my favorite for scraping around the bowl. And here are some great pot holders for removing the hot cookie sheets from the oven.

Triple Chocolate Cookies

Ingredients
  

  • 1/4 c. salted butter
  • 1/2 c. semi-sweet chocolate chips
  • 1 c. brown sugar packed
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 1/2 c. all-purpose flour
  • 1/4 c. baking cocoa
  • 1/2 tsp. baking soda
  • 1 tsp. cornstarch
  • 1/4 tsp. salt
  • For stirring in:
  • 1/2 c. milk chocolate chips
  • 1/2 c. semi-sweet chocolate chunks

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Prepare cookie sheets by lining them with nonstick baking mats or lightly spraying them with nonstick baking spray.
  • Melt 1/4 c. butter with 1/2 c. semi-sweet chocolate chips in the microwave, in increments, stirring in between. Stir until completely smooth.
  • Pour melted chocolate mixture into the bowl of an electric mixer, then add brown sugar, vanilla and egg to it. Mix until incorporated and it lightens slightly in color.
  • In a separate bowl, whisk together flour, baking cocoa, baking soda, cornstarch and salt.
  • Add the flour mixture to the chocolate mixture and mix just until incorporated. Stir in 1/2 c. milk chocolate chips and 1/2 c. semi-sweet chocolate chunks.
  • Using a 2" cookie scoop, scoop dough into balls and place two across and three down (six total) on prepared cookie sheets. Make sure they have some good space in between them. Press the dough balls down with the palms of your hands to flatten them, while making sure they keep their round shape.
  • If there are chocolate pieces left in the bowl, press them into the tops of the cookies.
  • Bake for 9 to 10 minutes.
  • Remove from the oven and allow them to cool on the cookie sheets for a few minutes, then carefully remove them to a cooling rack to cool completely. Store in an air tight container once completely cool.

Happy birthday to me! But you certainly don’t need a birthday as an excuse to make these amazing cookies! Your taste buds will never forget the experience!
