I’m so excited today to have Jen from Yummy. Healthy. Easy here! She has an amazing blog filled with so much yummy-ness! I met Jen when we lived in LA while my husband was going to school, and trust me when I say that she is a connoisseur in the kitchen! She’s here to share her “Softest Sugar Cookie” recipe with us. Let me just tell you-I made these the other day and I still can’t get over how perfect they are! I was eating them without frosting, and I never do that! I made them for an activity for 10 and 11 year old girls. It was so funny-one little girl poked the cookie to test it without fully committing, and said, “It’s nice and soft!”. And then it immediately went to her mouth. No exaggeration–they are absolute PERFECTION, and I will never make another sugar cookie recipe again. Take it away, Jen!

Hi! My name is Jen Nikolaus and I blog over at Yummy. Healthy. Easy. I’m a stay at home mom and am completely outnumbered by boys in my house! There’s my husband Cory, and our four crazy boys: Justin (11 years old), Chance (8 years old), Brock (2 years) and Tate (23 months). When I’m not chauffeuring kids to baseball, play dates or piano lessons, you can usually find me in my kitchen where I enjoy creating yummy, healthy and easy meals for my family.
I am so excited to be here on I Dig Pinterest!
Since it’s Valentine’s Idea Week on I Dig Pinterest, Christine asked me to share this recipe for my heart-shaped Sugar Cookies & Buttercream Frosting.
I’m not sure my pictures do these cookies justice. They are AMAZING!!
I have attempted all sorts of recipes, trying to find the right one to make the “perfect” sugar cookie. One that is thick, soft and just about melts in your mouth when you take a bite. Well, this recipe is the one. It’s the best sugar cookie recipe EVER. I know that’s a bold statement but I just have to say it! The buttercream frosting makes this already awesome cookie even better!! Make some today and I promise they won’t disappoint! And who wouldn’t love receiving an adorable heart cookie on Valentine’s Day?! Your Valentine will love it!
The Softest Sugar Cookies:
Ingredients:
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 3 tsp. vanilla extract
- 1 cup sour cream
- 1 tsp. salt
- 2 tsp. baking soda
- 5 1/2 cups all-purpose flour
Directions:
- In a mixer, cream butter and sugar and then add eggs and vanilla. Add sour cream.
- In a separate bowl, combine salt, baking soda and flour. Add to butter mixture, creaming until combined.
- Roll out on a floured surface to about 1/4 to 1/3 inches thickness. {Yes, seriously. If you make it any thinner, they will be crispy and not as good! This is the trick to making them super soft!}
- Cut with cookie cutters and using a spatula, transfer cookies to baking sheet that has either been sprayed with cooking spray or has parchment paper on it.
- Bake at 375 degrees F for 7-8 minutes {Yes, seriously. This is another important step! Do NOT overbake!} They won’t look done, but just trust me on this, take them out of the oven.
- Wait about 5 minutes and carefully transfer cookies to a cooling rack. (This recipe makes several dozen cookies but is easy to half as well.)
Buttercream Frosting:
Ingredients:
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 2 tsp. vanilla extract
- 1/4-1/3 cup milk
- food coloring, if desired
Directions:
- In a mixing bowl, cream butter until smooth. Beat in powdered sugar and vanilla until crumbly.
- Gradually add milk until frosting reaches desired consistency. Add food coloring and stir until combined. Spread on cooled cookies and ENJOY!! They are SO good!
A great BIG thank you to Christine for letting me guest post today! I am a huge I Dig Pinterest fan!

One of my favorite parts about this recipe is that you don’t have to wait for the dough to chill! Thanks so much for sharing, Jen! Feel free to grab my blog button!
I bet you want to run and make some right now, don’t you? I do. For the second time.
