You’ll be the dinnertime hero when you present this beautiful and flavorful Veggie, Herb and Garlic Fettuccine! It’s mostly made in a skillet and is creamy and delicious!
I have always been a huge pasta fan. I love that it often means a quick meal that’s also hearty and satisfying. Today’s dish is no different. It’s loaded with fresh mushrooms, broccoli, and colorful bell peppers, then given a quick bath in some yummy Campbell’s Creamy Herb & Garlic Soup. In one word, it’s “Scrum-diddle-de-umptious!”
My daughter’s on spring break. Have your kids had theirs yet? I always think “Next week will be less busy because…” and it never happens. This time I thought, “Ahhhh….I can’t wait for no homework and sleeping in.” Yes, her work is often mine. 🙂 You probably know how that goes.
I had hoped after graduating from college I’d never have to think about math ever again, but it’s back to haunt me in the form of second grade story problems! Ha!
So far I’m conquering them, but just give me a few years and I’ll be calling for my genius husband to come to my tutoring rescue.
So I may not have to show forth my addition and subtraction skills over the next several days, but that doesn’t mean my job as mom gets put on hold. My role just shifts a little to become the entertainer, the referee, trip advisor, and so on. You probably can relate.
I also don’t get a reprieve from meal planning and cooking because our appetites didn’t go on spring break with the school system. Imagine that. 🙂 Not that I mind. I mean, today’s recipe involves very little thought or preparation, so it basically makes itself.
It involves slight hand motion via chopping and tossing, but beyond that, you can easily think about summer vacation or your favorite show that will be on tonight, with no risk to the outcome of dinner. Just make sure to limit your daydreaming to 30 minutes or less, because that’s when this beauty of a meal will be ready to hit the table!
You’ll just need to grab some Campbell’s Soup for Easy Cooking and a few other items at your local Walmart and you will be well on your way to a weeknight meal that will cue the “ooooohhhhhh”-ing and “ahhhhhhhhh”-ing. The partakers may even feel inclined to bow at your feet, so don’t let that surprise you.

This little beauty is this dinner hero’s secret weapon. It’s packed with flavor to make meal preparation a cinch! I could totally see it in a pot pie recipe too! 8 oz. fresh mushrooms, sliced (I used Monterey)
1/2 large yellow and 1/2 red bell pepper, sliced thinly
1 heaping cup broccoli florets, cut small
2 Tbsp. olive oil
1 clove garlic, minced
3/4 lb. Fettuccine noodles, cooked according to package directions, and drained
1 carton (14.5 oz.) Campbell’s Soups for Easy Cooking in Creamy Herb & Garlic
1/2 cup mozzarella, swiss, or parmesan cheese, shredded (optional)
Begin by cooking your mushrooms, peppers, and broccoli in a skillet with olive oil and garlic until tender (10-15 minutes). I sautéed mine for a bit and then put a lid over them so they could steam.
Add your cooked fettuccine to the skillet, along with the Creamy Herb & Garlic Soup. Toss all ingredients together. Warm over the burner for a few minutes to heat evenly, then serve immediately. Add shredded cheese for garnish, if desired.
This recipe is definitely going on the regular meal rotation around here! My family deemed it a winner!I love how adaptable it is too! Just round up whatever veggies you’ve got in your fridge and I’m sure it will be delicious!
