I’ve been stocking up on Great Day Farms Hard-Boiled Eggs every time I got to Walmart because they are so convenient and perfect as add-ins for so many meals, including today’s! They’re also great for meal prepping and post-workout snacks!

These were so yummy that I had one for lunch and dinner after discovering this phenomenal recipe! You know it’s a keeper when you want to eat it twice in one day! My husband and I couldn’t get over how incredible all the flavors are together!
This is also a great way to get some quality protein into your diet!
To make them: Start by spreading some hummus (your favorite variety) inside a whole wheat pita that you’ve cut in half. Next, add halved cherry tomatoes, sliced Great Day Farms Hard-Boiled Eggs, sliced cucumbers, diced purple cabbage, a little Feta and enjoy! It’s that easy and so tasty! I know you’re going to love it!
Veggie Hummus Pitas
- 1 Whole Wheat Pita cut in half
- 2 Great Day Farms Hard-Boiled Eggs sliced
- 1/4 c. halved cherry tomatoes
- 1/4 c. purple cabbage diced
- 1/4 c. sliced and quartered cucumbers
- 2 Tbsp. Feta cheese
- Spread your favorite variety of hummus inside the pita. Fill with sliced Great Day Farms Hard-Boiled Eggs, halved cherry tomatoes, diced purple cabbage, sliced and quartered cucumbers and Feta cheese. Enjoy!
