Back to School means easy and yummy meals for the family that come together in a flash, like this Veggie Mac ‘n Cheese with State Fair® 100% Beef Corn Dogs!
My kids start school in just a few weeks! Are your kids getting excited to head back? It’s crazy how fast the summer flies by! We are still in the summer mode, trying to work in all the fun activities we can before it’s over! But all too soon, they will be hitting the books again!
When that happens, I rely on simple dinner ideas that can be put together without much fuss! Homework and after school activities seem to steal our evening away, so there’s never much time for meal prep! So State Fair 100% Beef Corn Dogs and homemade mac ‘n cheese are a staple around here! My kids go crazy for the combo and they are so easy to whip up without much planning! It’s a win-win!
I purchased everything I needed to make this tasty meal at my local Walmart.
I don’t know of a single kid who doesn’t love mac ‘n cheese and corn dogs! This meal received cheers at our house (no surprise there)! We love State Fair Corn Dogs because they have the best flavor (they’re made with real honey)! They are also packed with 6 grams of protein per serving and made with real chicken, turkey, pork and beef! They’re #1 in our book!
I love to incorporate veggies into our meals whenever possible, so I figured why not add them into a cheesy bowl of homemade mac ‘n cheese? It makes the pasta so colorful and pretty! My kids were skeptical at first when they saw the broccoli, haha, but they fell in love at first bite! This is the best mac ‘n cheese you will ever make and did I mention that it’s so easy?! Well it is!

Veggie Mac ‘n Cheese
Ingredients
- 1/2 red bell pepper diced
- 1/2 zucchini chopped
- 1/2 head of broccoli cut
- 1/2 c. frozen peas
- 1 lb. macaroni pasta
- 1/4 c. butter
- 1/4 c. plus 1 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 12 oz. fresh medium Cheddar cheese grated (don't use the pre-shredded kind)
- 2 c. whole milk
Instructions
- Spread red peppers, zucchini, broccoli and peas on a cookie sheet and drizzle with olive oil. Toss to coat. Cook at 425 degrees Fahrenheit for 20 to 25 minutes, or just until the veggies are fork tender. Remove them from the oven every 5 minutes and toss so they'll roast evenly.
- Cook pasta according to package directions. When it's almost done, with about 5 to 7 minutes left, start making the sauce. For the sauce, in a large skillet over the stovetop, melt butter over medium-low heat while stirring it around. Whisk in the flour, salt and pepper, then slowly whisk in the milk (1 c. at a time). Turn the heat up to medium-high and allow it to come to a low boil while stirring constantly. The sauce will bubble and thicken, then remove it from heat. Stir in grated cheddar, allowing it to melt fully. Drain pasta and stir sauce into it, along with the roasted veggies. Serve immediately.
