As we’re all settling into a new routine with kids off school, work moved to home in some cases, and social distancing in place, cooking at home has been moved to the forefront of our lives. Our family is doing our best to support local restaurants by grabbing take-out at least once a week, sometimes twice. We typically do not eat out that often. But, given the circumstances, our economy needs a boost!
However, I’m still doing my best to cook at least four dinners for my family per week. I’m finding that I have more time to make homemade bread. I love it! The other days we have leftovers, easy items from the freezer, or grab takeout. I hope you’re staying happy, healthy and sane! We’ve got this!
Here’s what we ate for dinner last week.
Penne with Marinara Sauce and 1 hour dinner rolls. I was so impressed with the rolls! I’ve never made one hour rolls, but they turned out so delicious! I’ll definitely be making them again and again.
Chicken Burrito Skillet. This is so easy, quick, yummy and doesn’t dirty a ton of dishes! A total win!
Creamy Ham and Veggie Soup and My Favorite White Bread. This soup recipe is meant for the crockpot, but I made it over the stove top this time, as I didn’t get it in the slow cooker in time. It turned out perfectly!
Monte Cristo Sandwiches with the leftover homemade bread.
Cheesy Broccoli Bake. I delivered this to a friend who just had a baby. It’s always a hit!
