We just returned from a fun extended family beach trip to California. It was so relaxing and just what we needed. While there at the rental house, each family took a turn cooking and cleaning up dinner. It was a great system and we definitely ate well! Are you taking any trips this summer? Do you mostly eat out or cook your meals while on vacation? With how large our extended family is, we typically cook to save money.
Here’s what we ate for dinner last week:
Grilled Hamburgers and Hotdogs, fruit salad, and veggie tray.
Rotisserie Chicken over Balsamic Greens Salad. We bought a pre-packaged balsamic and greens salad kit and shredded a rotisserie chicken, then combined them for an easy meal with rolls!
Grilled Pork Tenderloin with Oven-Roasted Diced Potatoes and Parmesan Rolls. To make the oven roasted potatoes, peel and dice about four to five large potatoes, then place them in a zip top bag and toss in olive oil and a package of dried onion soup mix. Bake at 400 degrees Fahrenheit for approximately 40 minutes (or until tender when poked with a fork), removing them at 20 minutes to toss. For the parmesan rolls, I coat frozen Rhodes’ rolls in melted butter, then sprinkle with grated parmesan cheese and let them raise, then bake.
Pasta with Alfredo Sauce, Garlic Bread and fresh fruit.
Pulled Pork Sandwiches. We always keep some pulled pork frozen so we can pull it out and thaw for an easy meal!
