White Chili with Chicken

 Tonight’s the big night!  I can’t wait to take my kids out trick-or-treating. I don’t know who’s more excited…them or me. 🙂  We’ve settled on what everyone’s going to be…AGAIN.  We’ve attended quite a few parties, and every time, the kiddos want to be something different.  We have tons of dress-ups laying around the house, so I always tell them to go choose one from the bin.

The weather always seems to turn cold right before the spooky day.  It’s crazy how that happens, but I can always count on it.  So I like to fill my family’s tummies with a warm meal before donning the jackets and heading out in search of candy.

Halloween night is always really hectic, so I like to make a soup (or chili) earlier in the day and keep it warming on the stove or in the crock pot until we’re ready to eat.   That way, we can scarf down some goodness, get the costumes on and dart out the door as soon as the sun goes down.

I’m one of those crazy moms that plans out our route before we leave on the night of October 31st.  I know exactly which houses around us give out the good stuff, so I schedule our night around that. 🙂  Some of our neighbors disperse regular-sized candy bars, so why waste time on the minis, when you can have an extra-large hunk of chocolate instead?  There’s merely a few hours to fill those buckets to the brim, so it’s a race against the clock.  Trick-or-treating is serious business. 🙂

{WHITE CHILI WITH CHICKEN}
Adapted from Family Fun Magazine Oct. 2009 issue
Serves 6
3 T. olive oil
1 large onion, chopped
2 t. chili powder
1 1/2 t. cumin
1 t. oregano
2 garlic cloves, minced
2 (15-ounce) cans white kidney or navy beans, drained and rinsed (I used one can Navy and one can Cannelli)
3 to 4 cups diced cooked chicken
1 c. frozen, fresh, or canned corn kernels
1 (7-ounce) can diced green chilies
3 cups chicken broth, plus more for thinning if desired

1/4 t. salt
2 T. butter, softened
1 1/2 T. flour
Pepper
Grated Cheddar or Monterey Jack for topping (optional)
Warm the oil in a large, heavy saucepan over medium heat.  Add the onion and saute, stirring often, for 7 minutes.  Stir in the chili powder, cumin, oregano, and garlic and saute for another minute.  Stir in the white beans, chicken, corn, green chilies, chicken broth, and salt.  Bring the mixture to a gentle simmer and allow it to continue simmering, partially covered, for 10 minutes.
In a small bowl, blend the butter and flour.  Add the mixture to the chili and stir until it thickens, about a minute.  Add more salt and pepper to taste.  If you like, add more broth to thin the chili.  Serve the chili hot, topped with cheese, if desired.
Ladle up a bowlful of comfort on a cold evening and enjoy!

    I'm Kim stopping by from DBB to say Hey! I wish I had had this recipe last Sunday. We had a Chili Eatin' Meetin' at church and I was thinking of doing a White Chicken Chili.
