I enjoy making festive treats for my kiddos during the Halloween season. I get a kick out of watching their excited expressions when they walk in the door from school and see what fun snack or dessert awaits them.
My “Mummy” (hee, hee, I couldn’t help myself) did the same for me and my siblings, growing up, and I always knew I wanted to be one of “those moms” who provided her children with a homemade goodie as a reward for getting through a rigorous day of bookwork and the all-too-often social woes.
Peanut butter, butterscotch chips, and a white chocolate topping happily marry to bring you a scrumptiously cute Halloween refreshment!
How old were you when you stopped trick-or-treating?
I don’t remember my age, but I know that I felt super awkward that last year begging for candy door-to-door. The feeling was self-imposed I’m sure. I really wasn’t that old. Well I was if you consider my costume. I still vividly recall dressing as a Granny that time. My sister painted my face white with grey wrinkles and I wore an oversized button-up sweater over a thrift store, vintage patterned dress. My hair was pinned tightly up in a bun. I went home feeling kind of sad that I had “grown up” to the point where I no longer felt comfortable out and about on Halloween night with the other kids.
So now, I love that I get to re-live the memories and wonderful excitement of Halloween through my own children. I admit that I’m sort of selfish when it comes to making sure I’m the one who gets to take them around on Halloween night with their treat buckets, while leaving my candy-clad husband to “man the door” at our house. It’s just too much fun, and the hubby doesn’t know which houses give out the “big” candy bars like I do. 🙂 A choco-holic never forgets these things. 🙂
{YUMMY MUMMY SCOTCHEROOS}
Makes one 9″x13″ pan and approximately 12 mummies
1 c. smooth and creamy peanut butter
1 c. white sugar
1 c. karo (corn) syrup
1 pkg. (12 oz.) butterscotch chips
5 c. crispy rice cereal
1 1/2 pkg. (16 oz.) white chocolate chips or white baking chocolate
Edible eyes
Spray a 9×13 pan with cooking spray. In a large pot, add peanut butter, sugar, karo syrup and butterscotch chips. Melt over medium heat, stirring constantly. When all melted, add crispy rice cereal and quickly stir until evenly coated. Immediately press mixture evenly into prepared pan. Melt 1 package white chocolate chips (12 oz.) in microwave in 30 second increments, stirring in between. Pour over the base, let set (in refrigerator for a short time, if necessary), then cut into rectangles. I made sure to fit about 12 in the pan. Melt the remaining 1/2 bag (6 oz.) white chocolate chips in microwave in 30 second increments, stirring in between. Pour into a resealable bag and snip one small corner off. Add a dot of white chocolate to two edible eyes for each mummy and place close together at the top. Pipe on mummy strips in diagonals on each rectangle around the eyes. Let set and serve at room temperature.
