We enjoyed a summer free of sickness, which was AMAZING. I always dread the time when the kids go back to school simply because it means they’ll be bringing home new germs and the sick bugs will inevitably catch us.
We had a particularly rough time with illness last year. I’m attributing it to the fact that we’d just moved to a new place and the kids were in a new school around new germs. I’m hoping it was just an adjustment period and that we’ll be able to stay healthy this time around. Is it wishful thinking to shoot for a perfect 100%?
I try my best to keep everyone in the house comfortable and healthy all year long by incorporating more liquids, fresh fruits and veggies and whole grains into our diet, along with supplementing with vitamins.
We want to enjoy the school year and especially the upcoming holiday months together without interruption. There’s not much worse than someone getting sick and having to cancel fun or otherwise important plans, am I right?!

In my efforts to be proactive about my family’s health, I like to offer wholesome after school snack options like these Zucchini Banana Carrot Muffins. These are great for breakfast on the go too! Because I know how hectic school mornings can be. Just make them the evening before and then snatch one on the way out the door!
I love that these muffins (cupcakes without frosting, as my children call them) allow me to sneak fruits and veggies into my kids’ diet in such a delicious form, they don’t even know these are good for them. That will remain our little secret, mmmmmkay?
They are so yummy and moist because of the grated carrots, zucchini, and mashed banana! They received the stamp of approval from my picky kiddos, but then I never doubted they would!
Here’s how to make them:

Zucchini Banana Carrot Muffins
Ingredients
- 2 Tbsp. butter melted
- 1/4 c. brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1/3 c. applesauce
- 1/2 c. mashed banana
- 1/2 c. finely-grated carrots peel it first
- 1/2 c. finely-grated zucchini peel it first
- 1/2 c. white flour
- 1/2 c. whole wheat flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
Instructions
- Preheat oven to 350 and line a 12-cup muffin tin with cupcake papers.
- In the bowl of an electric mixer, cream together melted butter, brown sugar, egg, vanilla, applesauce and mashed banana. Add grated carrots and zucchini and mix until incorporated. In a separate bowl, stir together white and wheat flours, baking soda, salt, and cinnamon. Add it to wet mixture and mix just until combined.
- Fill paper cups about 2/3 full. Bake for approximately 18-20 minutes or just until a toothpick inserted into the center comes out clean (moist crumbs are good, but doughy is not).
The kids scarfed these down! My very perceptive son noticed there were bits of carrot in them after he’d already taken a bite, but didn’t sweat it one bit because of the wonderful experience his taste buds had, had. 🙂
