Gooey S’mores Cookie Bars

Servings 9 bigger pieces or 12 smaller pieces

Ingredients
  

  • 1 1/2 c. graham cracker crumbs finely crushed
  • 1 c. light brown sugar packed
  • 3 large eggs
  • 1 1/2 tsp. vanilla extract
  • 6 Tbsp. butter softened
  • 1 1/2 tsp. baking powder
  • 1 1/2 c. all-purpose flour
  • 1/4 tsp. salt
  • 7 oz. container marshmallow creme slightly warmed in the microwave to make it easily spreadable
  • 2-3 Hershey Milk Chocolate Candy Bars broken into small sections

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease an 8"x8" pan, or spray with nonstick baking spray.
  • In the bowl of an electric mixer, add graham cracker crumbs, brown sugar, eggs, vanilla, and softened butter and cream together completely, scraping down the sides with a spatula in between.
  • In a separate bowl, whisk together baking powder, flour and salt. Add flour mixture to the wet mixture and mix just until combined.
  • Press 3/4ths of the cookie dough into the bottom of the prepared pan, reserving the remaining 1/4th for later.
  • Spread the slightly warmed marshmallow creme over the cookie dough, then sprinkle evenly with Hershey bar pieces.
  • Take small portions of the remainder of the cookie dough at a time, press flat in your palm, then lay on top and try to piece together as best you can. It's ok if the entire thing isn't covered completely. Small areas of marshmallow and chocolate may peek through.
  • Bake for approximately 20-22 minutes, or just until set. Remove from oven, allow them to cool mostly, then cut into bars and serve.
