Baked Chili Roni

Ingredients
  

  • 1 lb. ground beef *or the same amount of diced Kielbasa, I recommend using Kielbasa for added flavor
  • 3/4 c. diced yellow onion
  • 1 tsp. minced garlic
  • 4 c. hot water as hot as you can get it from the tap
  • 16 oz. tomato sauce two 8-oz cans
  • 2 Tbsp. brown sugar
  • 1 Tbsp. chili powder
  • 1 tsp. celery salt if you don’t have any, substitute 1/4 tsp. salt and 3/4 tsp. celery seed
  • 1 tsp. salt
  • 1 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 2 cups elbow macaroni uncooked
  • 1 can 16 oz. kidney beans, rinsed and drained
  • Grated cheddar cheese for topping

Method
 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large skillet or cast iron pan over the stove top, brown ground beef with onion and garlic until beef is no longer pink. Drain fat. *If using Kielbasa (recommended), cook and stir Kielbasa pieces with onion and garlic over the stove top until kielbasa is completely cooked.
  3. Add hot water, tomato sauce, brown sugar, chili powder, celery salt, salt, dried oregano and black pepper and bring the meat sauce to a full boil.
  4. Stir in uncooked macaroni. Continue to allow it to boil and cook over the stovetop, stirring every so often, uncovered, for 10-15 minutes or just until macaroni is tender and liquids mostly cook out.
  5. Stir in kidney beans, transfer to an oven-safe dish if needed, and cover with foil or an oven safe lid. Heat through in the oven for about 20-25 minutes.
  6. Top each serving with grated cheddar cheese.

Notes

I recommend using Kielbasa for added flavor, but feel free to use ground beef if you prefer, or if that's all you have on hand.
