Caramel Apple Crisp

Ingredients
  

  • Apple Mixture:
  • 4 large apples peeled, cores removed, and sliced thin (I like to use Granny Smith)
  • 1/2 c. granulated sugar
  • 2 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • dash of salt
  • 2 Tbsp. lemon juice divided
  • 1/2 c. caramel bits
  • Streusel Topping:
  • 1/2 c. butter melted
  • 3/4 c. brown sugar
  • 1/2 c. flour
  • 3/4 c. old fashioned oats
  • 1/2 c. walnuts or pecans chopped
  • pinch of salt

Method
 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Whisk together sugar, flour, cinnamon, nutmeg, and dash of salt to make the apple coating and toss apples in it. Make sure the mixture is completely coating the apples and that none remains on the bottom of the bowl.
  3. Arrange 1/2 of apple mixture in the bottom of a greased 8x8 baking dish. Sprinkle with 1 Tbsp. lemon juice. Sprinkle caramel bits over the apples. Top with remaining apples and sprinkle with 1 Tbsp. lemon juice.
  4. Make topping by melting butter (in microwave) and stirring in brown sugar, flour, oats, nuts and a pinch of salt. Make sure all the ingredients are incorporated well. Sprinkle over the top of the apples.
  5. Bake for approximately 40-45 minutes, or just until the apple mixture is bubbling, apples are soft, and the topping is nicely crisp, but not too brown. Serve warm with vanilla ice cream or fresh whipped cream.
