Chocolate Dipped Strawberry Sandwich Cookies

Ingredients
  

  • Cookies:
  • 1 brownie mix 18 oz. I used Duncan Hines
  • 1 tsp. vanilla extract
  • 1/4 c. all-purpose flour plus 1 or 2 Tbsp., if necessary
  • 1/2 cup 1 cube butter, softened
  • 1 large egg
  • Strawberry Buttercream:
  • 4 c. powdered sugar
  • 1/4 c. plus 2 Tbsp. mashed strawberries I didn't want to puree because I wanted small pieces
  • 1/2 tsp. almond extract
  • 1/2 c. butter softened
  • Dip:
  • 1 c. chocolate chips melted (or your favorite dipping chocolate), you may need to thin it with a little shortening, I didn't end up thinning it

Method
 

  1. Preheat oven to 350 degrees Fahrenheit. In the bowl of an electric mixer, combine brownie mix, vanilla, flour, butter and egg. Scoop or form into 1 1/2" balls and place 2" apart on a greased or non stick baking mat lined cookie sheet.
  2. Bake for approximately 8-9 minutes. If you want the cookies to be flat, press down the dough balls slightly before baking, otherwise they will have a little more dimension. If it looks like the first sheet of cookies in the oven is spreading out too much, add 1-2 Tbsp. more flour to the remainder of the dough.
  3. Allow cookies to sit on sheets for a few minutes before removing them to a cooling rack to cool completely.
  4. For the buttercream frosting, cream together all ingredients in the bowl of an electric mixer. Frost a cookie, sandwich with another, and place frosted cookies in the refrigerator so the frosting can set completely.
  5. After frosting is set, melt chocolate in a tall microwavable container or cup and dip sandwich cookies halfway in it. Place cookies back in the refrigerator so chocolate can set.

Notes

*I'm at high elevation, so it's hard to say exactly how much flour you will need. I used 1/4 cup and that was perfect, but you may need to add one or two tablespoons, depending on your elevation.
*One batch of cookies only makes 12 sandwich cookies, so you'll probably want to double the cookie recipe, but the frosting recipe listed above should be more than enough for a double batch of sandwich cookies.
