Preheat the oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking mats or lightly spray with nonstick baking spray.
In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, eggs, and vanilla extract.
Add in melted chocolate and mix until combined.
In a separate bowl, whisk together flour, baking cocoa, salt and baking soda.
Add flour mixture to wet mixture and mix just until combined, scraping down the sides in between.
Stir in 1 c. semi-sweet or milk chocolate chips and graham cracker pieces.
Scoop or roll into rounded 1 1/2" balls and place at least 2" apart on prepared cookie sheets
Bake for 8 minutes, then remove and immediately press 2 to 3 mini white marshmallows into the tops of the hot cookies. Allow the cookies to cool for a few minutes on the sheets, then carefully remove them to a cooling rack to cool completely. Store in an air tight container once cool.
