Method
- Preheat oven to 350 degrees Fahrenheit. Make the sugar cookie base by creaming together sugar, butter and egg. Add almond and vanilla extract and mix for one more minute. In a separate bowl combine the flour, baking soda, baking powder and salt. Add it to the wet mixture and mix until all ingredients are well incorporated.
- Press the dough into a large cookie sheet (i.e. a jelly roll pan), lightly sprayed with cooking spray. Bake for approximately 10 to 12 minutes (every oven is different, so check it often). Don't over bake! I pulled mine out before they started to brown around the edges. Allow them to cool completely before frosting.
- To make the frosting, in the bowl of an electric mixer, cream together softened cream cheese, Cool Whip, powdered sugar, and vanilla extract until creamy. Spread over cooled cookie crust.
- Slice and add your favorite fruit toppings. Slice into bars and serve immediately.

Notes
**If you're preparing this ahead of time, wait to frost and add the fruit until just before serving. The fruit juices will start to pool on top soon after putting it together.
*If you like a more sturdy cookie base, bake it on the longer end of the time window. If you like a soft cookie base, you may need to start checking it at 8 or 9 minutes, and bake just until it's set.
