Easy Fruit Pizza

Ingredients
  

  • Sugar Cookie Base:
  • 1 1/2 c. sugar
  • 1 c. butter softened
  • 1 large egg
  • 1/2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 1/2 c. all-purpose flour
  • Frosting:
  • 1 pkg. 8 oz cream cheese, softened
  • 1 c. Cool Whip
  • 3 1/2 c. powdered sugar
  • 1 tsp. vanilla extract
  • Fruit Topping Options add your favorites:
  • Strawberries
  • Blueberries
  • Blackberries
  • Raspberries
  • Canned Mandarin Oranges
  • Kiwis
  • Bananas

Method
 

  1. Preheat oven to 350 degrees Fahrenheit. Make the sugar cookie base by creaming together sugar, butter and egg. Add almond and vanilla extract and mix for one more minute. In a separate bowl combine the flour, baking soda, baking powder and salt. Add it to the wet mixture and mix until all ingredients are well incorporated.
  2. Press the dough into a large cookie sheet (i.e. a jelly roll pan), lightly sprayed with cooking spray. Bake for approximately 10 to 12 minutes (every oven is different, so check it often). Don't over bake! I pulled mine out before they started to brown around the edges. Allow them to cool completely before frosting.
  3. To make the frosting, in the bowl of an electric mixer, cream together softened cream cheese, Cool Whip, powdered sugar, and vanilla extract until creamy. Spread over cooled cookie crust.
  4. Slice and add your favorite fruit toppings. Slice into bars and serve immediately.

Notes

**If you're preparing this ahead of time, wait to frost and add the fruit until just before serving. The fruit juices will start to pool on top soon after putting it together.
*If you like a more sturdy cookie base, bake it on the longer end of the time window. If you like a soft cookie base, you may need to start checking it at 8 or 9 minutes, and bake just until it's set.
