Fluffy Strawberry Pancakes

Ingredients
  

  • 3/4 c. whole wheat flour
  • 3/4 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 3 Tbsp. granulated sugar
  • 3/4 tsp. salt
  • 1 1/4 c. milk
  • 3 Tbsp. melted butter
  • 2 large eggs
  • 1 tsp. vanilla
  • 1 c. fresh strawberries diced small

Instructions
 

  • Heat a griddle over the stovetop on medium-low heat. In a large bowl, stir together both flours, baking powder, sugar, and salt. Add milk, melted butter, eggs and vanilla and whisk together well so no lumps remain. Stir in diced strawberries.
  • Grease the heated griddle, if necessary, and pour batter in manageable rounds, flipping the pancakes when they start to bubble on top, allowing them to completely cook through so they are a nice golden brown on the outside and aren't gooey inside. Serve warm, topped with additional sliced strawberries and syrup, if desired.
