Hamburger Hash Brown Casserole

Ingredients
  

  • 1 lb ground beef
  • 2 tsp. minced garlic
  • 6 oz. frozen veggies I used a variety with carrots, beans, corn and peas
  • 13 oz. hashbrowns frozen (or thaw them first if you want it to cook faster)
  • 10.75 oz cheddar cheese condensed soup
  • 1/2 c. sour cream full fat
  • 1/4 tsp. onion powder
  • Salt and pepper to taste
  • 1 1/2 c. shredded cheddar cheese

Method
 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a skillet or dutch oven over the stove top, cook and crumble ground beef with minced garlic. Salt and pepper the meat as you're cooking and crumbling it. Cook until it's no longer pink. Drain grease if there is any.
  3. Transfer cooked hamburger to the bottom of an 8"x8" baking dish. Pour frozen veggies evenly over the top of the hamburger.
  4. In a large bowl, stir together frozen hash browns (or thawed), cheddar cheese condensed soup, sour cream, onion powder and salt and pepper to taste (1/4 to 1/2 tsp. salt). Spread the hash brown mixture over the veggies. Sprinkle with shredded cheddar, cover with foil and bake until completely warmed through, about 55-60 minutes if potatoes are frozen and less (around 35-40 minutes) if they're thawed. Remove the foil and return it to the oven for a few minutes so the cheese can fully melt on top. Serve and enjoy!
