Pistachio Cake Mix Cookies

Ingredients
  

  • 1 white cake mix 15. 25. oz. I used Duncan Hines
  • 2 large eggs
  • 1/4 c. butter melted
  • 1 tsp. vanilla extract
  • 1 pkg 3.4 oz. pistachio instant pudding and pie filling (dry)
  • 3/4 c. chopped chocolate chunks
  • 2-4 drops green food coloring optional

Method
 

  1. Preheat oven to 350 degrees Fahrenheit. In the bowl of an electric mixer, add cake mix, eggs, melted butter, vanilla, and pudding mix (and food coloring, if desired). Mix until combined, then stir in chocolate chunks.
  2. Drop spoonfuls of batter on greased or non-stick baking mat-lined cookie sheets (you want it to be somewhere between 1 and 2 Tablespoons each). Space them about 2" apart.
  3. Bake for approximately 8-10 minutes, or just until done, but not overly brown. Let sit on cookie sheet for a few minutes before carefully removing to a cooling rack to cool completely.
