Rob’s Rice

Serves 8-12

Ingredients
  

  • 2 1/2 cups white rice cooked
  • 2 Tbsp. minced garlic
  • 1 can SPAM 12 oz. or equivalent amount of Kielbasa or chicken or pork, diced
  • 3 links Chinese sausage diced
  • 1 can pineapple tidbits drained (8 oz.)
  • 1 can corn drained (15.25 oz), or the equivalent amount of fresh or frozen corn
  • 1 c. frozen or fresh peas
  • Sauce:
  • 2 large eggs
  • 2/3 cup Yoshida's sauce
  • 2 Tbsp. soy sauce
  • 1/2 tsp. sesame oil
  • 1/2 tsp. onion powder

Instructions
 

  • While the rice is cooking, add diced meat (SPAM and Chinese sausage or whatever meat combo you choose), along with minced garlic and pineapple tidbits to a large skillet or dutch oven. If you choose a less flavorful meat like chicken or pork, be sure to balance it out with a more flavorful meat like Chinese sausage, bacon or kielbasa for the second meat.
  • Allow the meat and pineapple to cook over medium-high heat, stirring frequently. When the meat is cooked and mostly browned to your liking, add the veggies (corn and peas) and cook over the stove top until warmed through. Remove from heat and add cooked rice. In a separate bowl, whisk together eggs, Yoshida's sauce, soy sauce and sesame oil. Pour this mixture over the rice and meat mixture, sprinkle with onion powder and stir constantly, over medium heat, until the liquids cook into it. Don't let it dry out too much. Serve immediately.
