The Best Funfetti Cake Starting with a Boxed Mix

Ingredients
  

  • 15.25 oz Classic White Cake Mix my favorite is Duncan Hines
  • 3/4 cup buttermilk make your own by adding just enough white vinegar or lemon juice to cover the bottom of the 3/4 measuring cup, then filling the rest with milk; let it sit for a few minutes to turn sour
  • 3 large eggs
  • 1/2 c. butter melted
  • 1 tsp. pure vanilla extract
  • 1/2 c. colorful jimmies
  • Frosting:
  • 1/2 c. butter softened
  • 3 1/2 c. powdered sugar
  • 1 tsp. pure vanilla extract
  • Approximately 4 Tbsp. milk just enough for thinning; add it slowly
  • Colorful jimmies for garnish

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and grease a 9"x13" metal cake pan.
  2. In the bowl of an electric mixer, mix white cake mix, buttermilk, eggs, melted butter, and vanilla. Add sprinkles and quickly mix just until incorporated.
  3. Spread batter evenly into prepared pan.
  4. Bake for approximately 20-22 minutes, or just until a toothpick inserted into the center comes out clean. Don't over bake.
  5. Allow the cake to cool completely on a cooling rack.
  6. Make the frosting by creaming together softened butter, powdered sugar, vanilla, and just enough milk for thinning (add 1 Tbsp. at a time and mix in between) in the bowl of an electric mixer. Cream it for 2-5 minutes to make sure it's nice and creamy and fluffy!
  7. Frost the cooled cake, add extra jimmies on top for garnish, and enjoy!
